Deep garnet-purple colored, the 2014 Cabernet Sauvignon has a drop-dead gorgeous nose of Sichuan pepper, hoisin, peppered salami and fertile loam over a core of blackberry preserves and redcurrant jelly with touches of kirsch and pencil shavings. Medium to full-bodied and concentrated yet still maintaining that wonderful purity and elegance that is the signature of this estate, it has layer upon layer of earthy nuances and a very long finish.HK$9,180.00 -

A more exuberant, sexy wine than the 2014, yet still in the house style emphasizing elegance and purity, the 2015 Cabernet Sauvignon Estate knocks it out of the park with its huge nose of crème de cassis, plums, Asian spices, scorched earth, tobacco leaf and graphite. This flows to a full-bodied, opulent, incredibly concentrated wine reminiscent of the 2013 on steroids. Full-bodied, with building tannin, integrated acidity, a stacked mid-palate, and a great finish, this is a tour de force in Napa Valley Cabernet Sauvignon from one of the greats. It has three to four decades of life ahead of it.HK$9,445.00 -

The 2016 Cabernet Sauvignon Estate has shut down slightly since I tasted it last year, yet it’s still a magical, perfect wine. A blend of 85% Cabernet Sauvignon, 9% Cabernet Franc, and the balance Petit Verdot, it offers incredible notes of pure crème de cassis, blueberries, camphor, crushed rocks, and lead pencil shavings. This rich, full-bodied beauty always reminds me of a great vintage of Château Margaux with its beautiful complexity, power, and elegance. As I wrote last year, do your best to give bottles 4-5 years of bottle age and it should evolve for three decades or more.HK$12,250.00 -

Spottswoode's 2017 Cabernet Sauvignon has been simply tremendous on both occasions I have tasted it so far. Sweet red cherry, red plum, flowers and mint give the 2017 striking freshness to complement its decidedly mid-weight structure. The intense heat of the vintage caused ripening to slow down and yielded a wine with just 13.7% alcohol, which is low for both the estate and Napa Valley in general. Spottswoode was one of the first estates in the valley to adopt a more moderate approach to farming and that really paid off in 2017, as a wine of this level in that year could have only resulted from impeccable farming. In a word: magnificent!HK$8,100.00 -

It strides confidently from the glass with classic notes of cassis and blackberry preserves followed by wafts of cedar chest, pencil lead, wild sage, crushed rocks, and lilacs, plus a hint of black truffles. The medium to full-bodied palate is super-intense, with loads of earth-tinged black fruit layers and a firm structure, finishing long and refreshing.HK$10,800.00 -

The 2015 Cabernet Sauvignon Lyndenhurst is pliant, supple and inviting. Dark cherry jam, plum, chocolate, spice and new leather are pushed forward in this racy, succulent Cabernet Sauvignon. The 2017 Cabernet Sauvignon Lyndenhurst is a very pretty wine. Bright red-toned fruit, floral notes and veins of tannin give the 2017 a real sense of energy; the purity of the flavors is just striking. The Lyndenhurst is easily one of the best 2017s in its peer group. This vintage has almost 1% less alcohol than the 2016, and a bit more tannic grip, which gives it a real feeling of energy. The Lyndenhurst is a blend of roughly equal parts declassified Spottswoode barrels and purchased fruit.HK$5,835.00 -

The 2018 Cabernet Sauvignon is stunning, just as it was last year. A dark, ample, brooding Cabernet, the 2018 offers up the essence of black cherry, plum, mocha, spice, graphite, leather and incense. The 2018 has shut down considerably since I tasted it last year. That won't be a problem in a few years' time, but today the 2018 is decidedly brooding. Even so, it shows tremendous finesse and tons of pure breed. It is without question one of the epic, present-day wines for the estate.HK$5,005.00 -
