The 2012 Cabernet Sauvignon Estate may turn out to be one of the finest examples of this cuvee yet made. Already exhibiting complex notes of forest floor, spring flowers, loamy soil and abundant black currant, black raspberry, licorice and charcoal notes, this full-bodied, opulent 2012 shows no hard edges. It should turn out to be spectacular. Both of these 2012s will drink exceptionally well young and last for two decades or more.HK$9,300.00 -

Both 2013 Cabernet Sauvignons are in bottle, and both are absolutely magnificent wines, probably the two finest Cabernets made by the Staglins to date. The 2013 Cabernet Sauvignon Rutherford (14.9% alcohol) has a stunning fragrance of lead pencil shavings, spring flowers (or is it violets?), sweet blackcurrant and black raspberry fruit, and a layered, opulent, rich and full-bodied mouthfeel. Add to that striking purity, equilibrium, and serious but finely grained tannins, and this is their finest Rutherford Estate Cabernet Sauvignon made to date. It has at least 30-40 years of life ahead of it.HK$11,515.00 -

The 2015 Cabernet Sauvignon Estate is one of the most delicate wines of the year. Sweet dried cherry, mint, cedar, tobacco and dried herbs all take shape in the glass. The 2015 has aged gracefully. Dark fruit, lavender, mocha, grilled herbs and sweet pipe tobacco lend notable aromatic presence as this opens with air. Poor set and selection in the field lowered yields dramatically. Production is just 1,500 cases, among the lowest ever here.HK$13,990.00 -

I continue to simply love the 2016s, which come close to rivaling the 2013s, albeit with a more elegant character. Another pure class release from this great estate, the 2016 Cabernet Sauvignon Estate is a Cabernet Sauvignon-dominated blend that includes small amounts of Cabernet Franc and Petit Verdot, all aged 20 months in mostly new French oak. Its deep purple/plum color is followed by classic Rutherford notes of blackcurrants, cedar pencil, chocolaty herbs, licorice, and hints of truffle. It's beautifully balanced, full-bodied, and seamless on the palate, and while it's less overt and sexy than the 2015, it shows the class, balance, purity, and length that makes 2016 such a special vintage. It offers pleasure today and will offer pleasure in another 20-25 years.HK$11,685.00 -

The 2017 Cabernet Sauvignon Estate is an attractive, racy wine with plush fruit, soft contours and tons of sheer immediacy. Sweet red berry fruit, floral notes, spice and mint are all nicely lifted in this enticing, mid-weight Cabernet Sauvignon from Staglin. The 2017 offers lovely freshness and aromatic presence in a medium-bodied Cabernet that can be enjoyed with minimal cellaring.HK$10,045.00 -

I was able to taste two wines from Staglin Family, both showing brilliantly. An utterly ultra-classic Rutherford Cabernet Sauvignon, the 2018 Cabernet Sauvignon from Staglin sports a deep ruby/plum color to go with a gorgeous bouquet of ripe blackcurrant and blackberry fruits as well as spicy oak, chocolate, smoked tobacco, and lead pencil shavings. Full-bodied, perfectly balanced, rich, and opulent, yet also pure and precise, this might be the finest vintage of this cuvée ever produced. It will benefit from 4-5 years of bottle age and has 40-50 years of longevity ahead of it.HK$12,550.00 -

The 2019 Cabernet Sauvignon Estate is a rich, heady wine that is going to need a number of years to shed its baby fat and come into its own. Dark and vertical in feel, the 2019 possesses tremendous energy as well as power. Black cherry, chocolate, new leather, licorice, espresso and cloves build into the huge, resonant finish. The 2019 spent 22 months in barrel, 80% new. I would not dream of touching a bottle anytime soon.HK$15,495.00 -
Intensely dark, black fruits fill the glass with the blackberry, blackcurrant, boysenberry and ripe Damson plum taking center stage. Unctuous and resinous, the complex notes of leather, coffee extract, cocoa liquor and crushed rocks are given lift and lightness by an integrated essence of camphor, anise and potpourri. While the palate is initially a bit compact and focused, it quickly blossoms into a wonderfully mouth coating elixir with a fine-grained structure and a lively, granular texture that keeps on keeping on. This 2013 Salus Cabernet Sauvignon is at present a big, structured and tightly wrapped wine that will give and grow when given time and air.HK$8,030.00 -

Medium to full-bodied, it explodes in the mouth with citrus and savory layers, with a gorgeous silkiness and loads of ginger and mineral sparks coming through on the finish. The 2018 Chardonnay Upper Barn Vineyard was aged for 10 months in French oak, 46% new. It has a very classy nose of ripe peaches, fresh yellow apples and allspice followed by fresh ginger, cashew and acacia honey plus a waft of sea spray. I love it today yet see no reason it shouldn t evolve for 7-8 years, if not longer.HK$6,117.00 -

The 2020 Esprit de Tablas slowly unfolds in the glass with a mix of dusty black cherries, blood orange and sweet herbs. It’s lifted in feel with crisp mineral tones and rosy inner florals that perfectly complement its core of tart wild berry fruit. More lifted than the surrounding vintages yet excellently concentrated, the 2020 tapers off with exceptional length and crunchy tannins as hints of tart cranberry fade. The 2020 is the product of a warm, late season, with the added challenge of smoke from raging wildfires. While it comes across as quite docile, I find no issues with taint.HK$5,280.00 -
