The 2015 Cabernet Sauvignon Nathan Coombs Estate is redolent of black cherry, plum, grilled herbs, worn-in leather, chocolate, clove and copious sweet oak from 100% new barrels Paul Hobbs used at the time. Powerful and dark in the glass, the 2015 has plenty of textural intensity, but it is also peaking. I would not push my luck on aging. This was the fourth vintage Paul Hobbs made from his Coombsville estate. Recent vintages show more finesse and a lighter hand with oak.HK$3,450.00 -

A bright silver/yellow/green hue, the 2022 Chardonnay Cuvee Louisa Goldrock Estate comes from the coolest temperature part of the vineyard and one of the latest ripening blocks, and it also spent 18 months sur lies. In the glass, it offers great, focused energy on the nose, with notes of sea spray, lime leaf, bright apple, and fresh pear. Mouthwatering out of the gate, this full-bodied Chardonnay is highly elegant and refined. It’s long on the palate, with a chalky texture, a mouthwatering feel, and a lot of tension and length, and it’s only going to improve if given a chance. The 2022 Chardonnay Edward James Estate was named after Paul’s grandparents on his father’s side and originates in a vineyard planted entirely to Hyde Wente clone of Chardonnay. It was raised in French oak for 18 months on the lees. In the glass, it’s highly expressive and layered with aromas of toasted spice, incense, honeysuckle, quince, and preserved citrus. Medium to full-bodied, it has a fantastic, long, supple texture with a linear, crystalline feel, great, evenly fresh acidity, and a salty, mouthwatering finish. From the remote area of Annapolis, the 2022 Pinot Noir Goldrock Estate pours a youthful magenta hue and is a bit more reserved, but as it begins to open in the glass, it reveals notes of bright mixed berries, wild raspberries, blood orange, and dusty earth. Medium-bodied, it’s bright and mouthwatering on the palate, with a juicy feel to flesh out the midpalate and a lovely, sanguine, salty finish. It’s going to be a fantastic, savory wine to drink over the coming 10-15 years. 1600 cases were produced.HK$9,665.00 -

A great example of a 2021 from a district of southern Napa that often produces the coolest, most supple cabernets. So dense yet silky and elegant. Graphite, iron, seashell and espresso aromas meet super-concentrated flavors of blackcurrant, blackberry and cocoa, all wrapped in extra-fine tannins that structure it for long aging without being at all harsh to sip now. In contrast, the 2021 Syrah Il Padrino Bien Nacido Vineyard is more masculine and feral, with ripe black fruits, cracked black pepper, leather, iron, and spring flowers, and a certain bloody character developing with time in the glass. Medium to full-bodied, it has a similar level of polish but is a touch more concentrated and lengthy on the palate, with ripe, building tannins and awesome length. The 2020 Chardonnay Kokoro is a selection made by Lato and comes from the single vineyards. Aged 16 months in 60% new French oak, it reveals a lighter gold hue to go with an incredibly pure and precise nose of stone fruits, honeyed minerality, brioche, and hints of baking spices. Riveting on the palate, with medium to full body and bright yet integrated acidity, it's balanced, has a distinct sense of minerality, and a great, great finish. The 2019 Syrah Sonoma Hillsides is once again the star of this range from Pax Mahle. Rich and exotic, with notable depth, the Hillsides is quite a bit brighter than the other Syrahs in the portfolio. Red cherry, plum, pomegranate, mocha, spice, leather and tobacco abound. The whole clusters are present, but nearly buried by the sheer intensity of the fruit. As always, the Hillsides is a blend taken from several sites, done with 100% whole clusters and aged in concrete. Every time I taste the Hillsides, I think the same thing: why doesn't Pax Mahle treat all his Syrahs this way?HK$3,840.00 -

In the mouth, it offers the deepest and most muscular palate while maintaining a seamless, slender texture, concluding with a powdery, glacial finish of drying mineral intensity.
