The Drinks Business (95-97)
Durfort-Vivens (Margaux; 97% Cabernet Sauvignon; 3% Merlot; aging for 18 months, 70% in new oak, 30% in amphora; tasted at the property). Cool, deep, austere and beautiful – with a very natural, elegant plunge-pool purity. Sesame seeds, very dark pure and crystalline berry fruit with damsons and sloes too, cassis and concentrated raspberry coulis; a suggestion of walnut oil too – rare in this vintage. There is a hint of the cedar to come, but this is much more about the fresh pulpy fruit for now. Violets, preserved violets and the parfumier’s essence of violet; hyacinth and peony too. Wild, herbal and slight gamey elements appear with greater aeration. This is texturally sublime on the entry with a lovely core of black cherry and damson fruit, ultra-refined tannins and great presence, compact density and purity. This is a wine with great concentration, depth and delineation – a combination that is very rare and very difficult to achieve in this vintage. An exceptional wine, with something of the calm tranquillity and refined grace and elegance of Pichon Comtesse de Lalande in recent vintages. The 2018 Dutruch Grand Poujeaux has a light bouquet that gains intensity with aeration, offering red fruit laced with pine and light minty aromas and fine definition. The palate is medium-bodied with firm grip, the tannins framing the satisfying blackberry and raspberry fruit. There is a sense of this Moulis holding itself back, and I appreciate the balance and harmony that carry through to the finish. A well-crafted wine that merits seeking out.HK$1,785.00 -

The palate is medium-bodied with finely-chiseled tannins, quite sappy in the mouth with a very satisfying, graphite-infused, minerally finish. This Moulis has evolved nicely in barrel and it should turn into a delicious 2020.HK$870.00 -

The 2008 Echo de Lynch Bages felt rather overdone on the nose, fig and prune-tinged black fruit that lack definition and elegance. The palate is medium-bodied with dry tannin, plenty of tobacco-infused black fruit with a rather austere and straight-laced finish that is the archetypal English gentleman’s claret. Sweet berry and currant on the nose and palate, with hints of mint. Full-bodied, with velvety tannins and a long finish. This is like Lynch from the 1980s. This is made with more Cabernet Sauvignon than the old second wines of Lynch, and shows more class. Score range: 89-92HK$5,975.00 -

The 2010 Echo de Lynch Bages has a very attractive bouquet, a mélange of red and black fruit tinged with damp loam and undergrowth aromas, all well defined and adding welcome floral scents with continued aeration. The palate is medium-bodied with fine grain tannins. Hints of graphite and bell pepper infuse the ample black fruit. There is superb weight and body towards the finish. A classic Claret from start to finish, this is a great wine in the making. I was shocked and pleased when the identity of this wine was revealed (incidentally one that I had not encountered previously.). It has a grand vin tech-sheet with 13.9% alcohol, 3.57 pH, and a massive IPT of 87. Deep purple-hued, with a great nose of blackcurrants, scorched earth, lead pencil shavings, tobacco, and dark chocolate, it hits the palate with full-bodied richness, a deep, layered monster of a mid-palate, and silky tannins. It's stunning juice all the way, and given its wealth of material and texture, it's drinkable today, yet smart money will hide bottles for 5-7 years, and it's going to evolve for 20 years or more.
