Vinous - Antonio Galloni (93)The 2018 Chauvin is rich and generous in the glass, with plenty of black cherry, espresso, menthol, licorice, chocolate and new oak flavors. Beautifully layered and sumptuous, Chauvin is so expressive today. The 2018 is quite lush, but it has enough energy to keep things in balance. Best of all, it will drink well with minimal cellaring. |

Bordeaux | 1 | 94+ (JD) | HK$3,060.00
Jeb Dunnuck (94+)I continue to love the wines from this château. The 2019 Château Chauvin shows an impeccably balanced, elegant, yet still concentrated style that's well worth seeking out. Mostly Merlot (there's some Cabernet Franc as well as a tiny amount of Cabernet Sauvignon), its deep purple hue is followed by a clean, pure, medium to full-bodied wine offering classic ripe darker cherry and currant fruits as well as spicy oak, chalky minerality, and hints of tobacco. It's still closed and reserved today, yet the balance is spot on, it has beautifully ripe tannins, and a great mid-palate. It's going to benefit from 4-5 years of bottle age and have at least two decades of prime drinking. It's wonderful stuff. |

Jeb Dunnuck (93-95)Tasted from multiple bottles, the 2020 Château Chauvin looks to be a superstar and boasts an already complex nose of ripe red and blue fruits, cedary incense, and chalky minerality. Beautifully balanced, medium to full-bodied, and just about seamless on the palate, it’s a remarkable Saint-Emilion that will benefit from short-term bottle age and cruise for two decades in cold cellars. |

Bordeaux | 1 | 86 (WA) | HK$51,485.00
Wine Advocate (86)At one time elegant, lightweight, and pleasant, the 1979 Cheval Blanc continues to develop in an unexciting fashion. The color is light ruby with a watery edge. The nose offers minty, mineral, earthy, herbaceous aromas backed by some berry and coffee-scented fruit. Light and lacking substance, with a short, angular finish, this wine was more enjoyable several years ago. Drink it up. Last tasted, 5/93. |

Wine Advocate (89)This somewhat charming, lightweight Cheval Blanc is fully mature but elegant, with sweet red and black currant fruit intermixed with mineral, licorice, and a hint of herbs. Spicy, medium-bodied, and very pleasant, this wine’s harmony gives it considerable appeal. Drink up. Last tasted, 11/02. |

The Wine Independent (100)The 1982 Chevel Blanc has a medium garnet-brick color and springs from the glass with scents of kirsch, dried cranberries, and pencil shavings, leading to hints of rose oil, rare steak, and crushed rocks. The medium-bodied palate is packed with mature red fruit and earthy layers, textured with satiny tannins and delivering seamless acidity, finishing on a long-lingering mocha note. Still very youthful, this was clearly a very good bottle, coming directly from the Chateau. The yields in 1982 for Cheval Blanc were a whopping 55 hl/ha, according to Pierre Lurton. |
