The 2018 Pommard Les Rugiens-Bas 1er Cru, which includes two-thirds whole clusters, has a well-defined and complex bouquet, a cousin of the Pezerolles in some ways. The palate is medium-bodied with fine-grained tannins, displaying a little more matière and slightly creamier in texture than the Les Pezerolles, leading to a precise, persistent, slightly more opulent finish. The 2014 Volnay 1er Cru Champans was fully destemmed this year. I like the definition here, vibrant with red cherry and redcurrant that is beautifully defined. The palate is medium-bodied and tightly wound. It feels quite masculine with a chalky texture finish; there is good backbone and extraction. Give this 3-4 years so that it becomes less Pommard and more Volnay.HK$4,275.00 -

The well-balanced palate is tannic on the entry. The brisk, terse finish indicates that it is in for the long haul. I like the salinity here. The de Montille 2005 Volnay Mitans displays a lovely nose of ripe cherry and flowers with an iodine mineral-medicinal note that, together with fruit skin tartness, follows on a highly-concentrated, impressively-layered, finely-tannic palate, with raw meat, floral and mineral suggestions dominating over any sweetness of fruit. The tightly wound finish here is smoky, pungent and subtly bitter. In two or three years one would be able to glean a clearer notion of this wine’s ultimate personality.HK$11,890.00 -

Broad, rich and sweet, with good flesh for the vintage leavened by an edge of acidity that will require a year or two to harmonize with the wine. The 2009 Volnay Mitans wafts from the glass with sweet scents of mint, dried flowers, tobacco and red cherries. It possesses marvelous depth in a weightless style informed from the use of 100% whole clusters. The 2009 can be enjoyed today or cellared. The 2010 Volnay Mitans was made with 100% whole clusters and that comes through loud and clear in the wine’s expressive aromatics. Layers of silky red berries follow as the aromas and flavors take shape. Rose petals, spices and licorice are layered into the sensual, totally beguiling finish. The Mitans needs time for the stems to fully harmonize with the rest of the elements, but there is no denying it is flat-out delicious. This is a great effort from Etienne de Montille. (100% vendange entier; one-third new oak): Healthy dark red. Complex but reticent aromas of kirsch and blueberry lifted by a floral quality. A bit youthfully withdrawn but lively and polished in the mouth, with a floral perfume that's rare for this drought year. Wonderfully classy, refined Volnay with outstanding subtle sweetness and energy and a very long finish featuring utterly suave tannins. A great young Volnay in the making.HK$6,800.00 -

(two-thirds whole clusters; one-third new oak; the sand on top of the limestone here typically yields relatively soft tannins, according to winemaker Brian Sieve): Good dark red. Cool black cherry aroma lifted by a stony quality. A step above the preceding samples in both juiciness and finesse; in fact, a real high-wire act of captivating sweetness and bright acidity. Very fine-grained, serious wine with excellent grip and length. These 45-year-old vines avoided the frost but yielded very little fruit, as they were very sensitive to rain and wind during the flowering.HK$5,120.00 -

The palate is medium-bodied and fleshy in the mouth, quite caressing but with good depth, a mixture of red and black fruit towards the lightly spiced finish.
