Ruby-red. Deep aromas of black plum, licorice and flowers, with complicating hints of truffle and underbrush. Broad, silky and sweet, with impressive volume for the vintage. Bright acids frame but do not dominate the dark fruit, smoke and mineral flavors. Finishes long and suave, with fine-grained tannins. Silky, dense and very intense, with a distinctly tangy high-toned quality giving lift to the sappy berry, dark chocolate and violet flavors. Piquant, classy wine with a very long, firmly tannic finish that delivers mounting length. The highest-toned of these 2010s at 0.55 grams per liter and the sexiest today. But this really needs at least eight to ten years of cellaring. There are 8 barrels of the 2014 Charmes-Chambertin Vieilles Vignes Grand Cru this year, five of them new. The bouquet demanded encouragement from the glass and it retains a sense of broodiness and introspection. This is holding everything back, although one can see that it leans more to the black side of the fruit spectrum compared to redder Corbeaux. The palate is medium-bodied with ripe, quite succulent tannin, but as always there is real elegance and poise here. It clams up a little towards the finish, just leaves the door open ajar, but sufficient to notice its impressive structure with a tingle of black pepper on the aftertaste. It will need several years in bottle, but it will be worth the wait.HK$4,330.00 -

Exquisitely balanced with just 13.2% natural alcohol, Bachelet's 2018 Charmes-Chambertin Grand Cru Vieilles Vignes has realized all the promise it showed in barrel, wafting from the glass with notes of cherries, plums, orange rind, raw coca, woodsmoke and rich, loamy soil. Full-bodied, layered and velvety, it's deep and concentrated, built around lively acids and an elegantly muscular chassis of rich, powdery tannins. It has a complex nose with dark berry fruit, forest floor and pressed flowers, beautifully-defined and gaining intensity in the glass. The palate is (again) supremely well balanced, quite peppery, with a silver bead of acidity. Darker fruit emerge towards the saline finish that is quite Mazoyères in style. Long tail on the finish. Alas, there is very little of the 2021 Côtes de Nuits Villages (7 instead of 22 barrels). This has a clean and precise, quite minerally bouquet. The palate is sweet and pastille-like on the entry, smooth texture, perhaps just denuded the complexity of more benevolent seasons on the straightlaced finish. Bright, deep ruby-red. Pure dark berries, tar and violet on the high-pitched nose. At once lush and juicy, with terrific definition to its flavors of black fruits, tar and mint. The substantial, strong tannins reach the front teeth. Finishes uncompromisingly dry but with the fat of the year. Bachelet tends to press early, as he's afraid of getting too much extraction of tannins in the presence of alcohol. This one needs a solid decade of bottle aging.HK$28,495.00 -

The 2015 Gevrey-Chambertin 1er Cru Les Corbeaux has a very precise bouquet: cranberry, wild strawberry and cold slate aromas that feel very focused...aromas with intent! The palate is medium-bodied with supple tannin, a crisp line of acidity, a mixture of red and black fruit here infused with blood orange and tangy Seville orange marmalade towards a feisty finish. The palate is medium-bodied with a citrus-fresh opening and marmalade and tangerine notes infusing the red fruit. The pretty, very expressive finish maybe just misses the depth of, say, the 2016. (70% of this fruit was lost to frost; 20% new oak): Bright medium red. Slightly reduced red fruits on the nose. Very rich, ripe and sweet, with a dark cherry flavor complicated by a gamey nuance. A bit tannic for Bourgogne Noir but appears to have the material to support its backbone. These vines are planted on the plain of Dijon in the village of Daix, at a high altitude of 400 meters.HK$1,740.00 -
