The 2018 Clos de la Roche Grand Cru has a very intense bouquet of copious red cherries, kirsch, orange blossom and blueberry fruit, quite floral in style although perhaps not quite delivering the breeding of the Clos Saint-Denis. The palate is succulent and rounded, the 50% new oak nicely integrated, and shows very good definition and persistency on the finish. There is a lovely crescendo here. Impressive.HK$11,625.00 -

The 2018 Clos Saint-Denis Grand Cru comes from the namesake lieu-dit, matured in 50% new oak with 25% whole bunch. It has a wonderful bouquet of pure red currant, cranberry, sous-bois and crushed stone aromas that is very delineated and focused. The medium-bodied palate offers a saline entry, superb tension and fine weight, with a pinch of black pepper toward the persistent finish. Superb.HK$2,240.00 -

Three barrels, all new, from three different coopers, The Clos St-Denis will stay in barrel until the spring. 20% whole bunches. An impressive, saturated, purple colour. This has all the gorgeous heady qualities of the appellation. Exceptionally sensual yet with depth and structure. Now another immense burst of fruit on the back of the palate. The 2023 Gevrey-Chambertin Les Champeaux 1er Cru includes 20% whole bunch this year. It has a beautifully defined bouquet with vivacious red berry fruit, superb delineation and a greater sense of mineralité than some of Tawse's other cuvées. The palate is medium-bodied, harmonious and silky smooth with pure red fruit notes and a poised, persistent finish. The 2022 was great, so is this.HK$5,480.00 -

The 2023 Gevrey-Chambertin Village has a perfumed floral bouquet with wilted rose petals infusing well-defined red fruit aromas. The 15% whole bunch imparts a subtle peppery note. The palate is medium-bodied with good depth and fleshy tannins that frame the sorbet-fresh red fruit with a touch of cracked black pepper and bay leaf on the finish. (picked on September 12): Dark red. Raspberry, minerals and smoked meat on the nose. Plush, silky and very ripe, although a bit lacking in definition and lift. Much smokier than the Etelois, this plush village wine finishes with building tannins.HK$855.00 -
Vinous (89-92)
(14% natural alcohol; these vines, ranging in age from 55 to 80 years, produced just half of a normal crop in 2016, according to winemaker Mark Fincham): Bright, dark red. Somewhat wild scents of black raspberry, smoke, black olive and minerals. Dense, juicy and youthfully imploded, with its tight dark fruit and rose petal flavors conveying a strong impression of energy. Not currently displaying the give of the Etelois, this wine finishes with a hint of game and slightly dusty tannins. Fincham likes this better than I do today, but it should benefit from a racking.HK$965.00 -

The 2019 Gevrey-Chambertin En Pallud is the largest cru of the domaine, from 0.64 hectares of vine located just below Mazis-Chambertin. It is raised in used barrels apart from one (I tasted from new François Frères and used). The precise bouquet presents red cherries, raspberry, crushed stone and wilted rose petals, beautifully focused. The palate is very finessed with silky tannins and pure red fruit. As Pinoté as Pinot Noir can be. I absolutely love this.HK$4,580.00 -

Burghound (87-89)
A slightly more deeply pitched nose is also exceptionally fresh with hints of earth and the sauvage lurking in the background. The medium weight flavors are also supple and easy-going while contrasting with the youthfully austere and equally rustic finale that it just a bit firmer.HK$1,985.00 -

From En la Poulotte (Couchey) and the better-known Les Longeroies, half and half. Mid ruby colour. The nose offers a very elegant floral pinot, there being a proportion of whole bunches. Lifted with light cherry fruit and a touch of orange zest. Given the lightness of tread of this Marsannay, there is delicious persistence. Drink from 2027-2030. Tasted Nov 2024.HK$1,700.00 -

The 2023 Mazis-Chambertin Grand Cru, which includes 12% whole bunch, has a very finely poised bouquet that's floral, cohesive and complex in style. The palate is medium-bodied and fleshier than the Mazoyères, with supple tannins and crushed stone notes permeating the red fruit tones. It's not powerful but full of finesse. (25% vendange entier; aging in 30% new oak; made from what Thomas Dinel described as a full crop, this wine had already been racked once by the time of my visit): Medium red. Slightly reduced aromas of strawberry, white pepper, herbs and toast. A rather, delicate, light style with sexy spices and a touch of sweetness but only modest force. Finishes with easygoing tannins and a touch of dryness. Attractive, aromatic wine if a bit lacking in stuffing.HK$785.00 -

The 2017 Morey-Saint-Denis Clos des Ormes 1er Cru is 25% whole clusters, matured in 35% new oak. It has a floral bouquet of bright red fruit infused with wilted rose petals. The palate is well balanced, displaying crisp acidity, fleshy ripe tannin and vibrant red fruit, and hints of brown spice on the finish. A Morey designed to give pleasure. It has a well-defined bouquet with touches of truffle and mushroom influencing the red berry fruit. The palate is well balanced with fine tannin, light on its feet but long and tender on the finish. The 2018 Morey-Saint-Denis Les Millandes 1er Cru, matured in 25% new oak and completely de-stemmed, has a vibrant, generous bouquet of copious dark cherry, boysenberry and undergrowth aromas, all well defined and neatly integrated with the oak. The medium-bodied palate offers grainy tannins, good acidity, a slightly chalky texture and superb delineation on the finish. This should drink very well for 15–20 years. Superb.HK$910.00 -

The 2019 Morey-Saint-Denis Les Millandes 1er Cru is 50% whole bunch with no new oak. It has a more powerful bouquet compared to the Clos des Ormes, although it does not exude the same mineralité or finesse. On the other hand, the palate is very well balanced and seems to have more depth and precision than the Clos des Ormes, leading to a compelling mineral-driven, saline finish that lingers for 45+ seconds.
