5 Star Wine. Two thirds of the vines were planted in from 1929, and the rest are not much younger. Very millerand grapes which were destemmed. Seven barrels made, which is unheard of even in the memory of the Maume family, whence these vines originated. The 2019 Gevrey-Chambertin Village contains 20% whole bunch and 30% new oak. It has a lovely, lilting brambly red berry nose infused with orange blossom and sous-bois aromas; very charming. The 2020 Gevrey-Chambertin Village has the audacity to surpass the En Pallud this year. It has a potent nose that seems to jump out of the glass. Quite floral with hints of lavender intertwined with the vivacious red fruit. So much energy! That comes across on the palate too. Fine tannins, sapid and tensile, there is a brightness to this Village Cru that is quite thrilling. Superb.HK$880.00 -

The 2018 Gevrey-Chambertin Aux Etelois is completely de-stemmed. It has a floral bouquet that bursts from the glass, revealing rose and iris petals and even a touch of lavender. The medium-bodied palate offers fleshy ripe tannins, fine acidity and a touch of allspice and clove toward the finish. (80% new oak; 60% vendange entier): Good dark red. Complex nose and palate meld cherry liqueur, animal fur, resiny spices and cedar, lifted by high notes of flowers and citrus peel. Very sweet, silky and ripe, with outstanding sappy verve giving this dense, tactile yet suave wine a noble quality. The very long, mounting finish shows superb fine-grained tannins and building sweetness. A real essence of this grand cru.HK$11,025.00 -

The 2015 Mazis-Chambertin Grand Cru, which includes 40% stems, has a gorgeous, engaging bouquet with a conspicuous oyster shell/marine influence running through the crystalline red berry fruit. There is outstanding aromatics, tension and energy here. The palate is medium-bodied with crisp acidity, harmonious and candied with finer tannin than the Mazoyères-Chambertin that one used to find with Bertrand Maume's wines, blessed with superb salinity and precision on the finish. An overtly spicy array is comprised of mostly red berries and lovely range of floral elements that are trimmed in just enough wood to merit pointing out. The mouthfeel of the broad-shouldered flavors is sleeker though not quite as dense or powerful while exhibiting fine length on the lingering and moderately austere finale where a hint of bitter cherry pit-character emerges. This is more elegant than the Mazoyères though just as structured and a wine that will also need extended cellaring to arrive at its peak.HK$2,745.00 -

Crystalline purity, a whole bevy of fine red fruits underlined by a little torrefaction. It is really backward still but with extraordinary length. Very stylish. The 2017 Savigny-lès-Beaune Les Lavières 1er Cru includes around 35% whole clusters, raised in 20% new oak (this cuvée was racked just before my visit). The nose shows just a slight reduction, but underneath there is pretty brambly black fruit mixed with black olive tapenade. The palate is medium-bodied with crunchy black fruit, quite fine tannin, touches of black currant pastilles and a dash of spice toward the pert finish. Pretty, though I would drink this over the next 10 years.HK$2,030.00
