The 2015 Morey-Saint-Denis 1er Cru Clos de la Bussière, which contains 50% whole bunch fruit, has a clean and precise, almost pixelated bouquet with blackberry, briary and cold limestone scents that gain intensity in the glass. The palate is medium-bodied with crisp acidity, quite structured in the mouth with filigree and tensile tannin. This is very focused, linear in style, which is surprising given the warmth during the growing season, with great clarity on the finish. Full, deep red. A touch of reduction to the very ripe aromas of raspberry, subtle spices and flowers. Creamier and sweeter than the 2016 version but with its pliant red berry, floral and mineral flavors showing lovely energy for 2015. In fact, this broad, pliant, classically dry village wine is not particularly dominated by its vintage and was easy to taste following the 2016s at this address. The 2015 Chambolle-Musigny 1er Cru Les Véroilles consists of five barrels this year, two of them new. It has an elegant and composed bouquet that is perhaps the most harmonious of all the domaine's 2015s—pure red cherry, strawberry and cranberry scents infused with cold stone aromas. The palate is beautifully composed, beautifully delineated and damn well beautiful to drink. There is amazing energy here and outstanding sustain in the mouth. The best Veroilles produced at the domaine and goddammit, perhaps the finest premier cru Chambolle-Musigny that I have ever tasted from barrel.HK$19,505.00 -

The 2015 Chambolle-Musigny Village, which contains around 20% new oak, has a crisp black cherry and raspberry-scented bouquet, tight at first but fanning out with open arms upon aeration. The palate is just wonderful: super fine tannin, a killer line of acidity, a little crunchiness to the texture, but bestowed with immense purity on the finish. Shows the acidity of a cooler terroir if not quite the mineral tension of the superb 2014 version. These vines are all in Meursault, mostly on the Volnay side on deep, clay-based soils. The 2015 Meursault 1er Cru Perrières is firmly shut down, offering up only a reticent bouquet of iodine, toasted nuts and citrus oil. On the palate, the wine is medium to full-bodied, tangy and bright but decidedly taut, playing its cards very close to its vest. From barrel, this was the most intense and concentrated wine in Roulot's cellar, with immense potential, but given how closed the wine is today, there is really no point pulling corks for a good five years.HK$16,125.00 -

The bouquet is quite showy and gregarious, featuring copious black cherry, liquorish and light furniture polish scents. The new oak is too forward for my own preference. The palate is medium-bodied with grainy tannin, a little drier and more conservative than I hoped, and there is a bitter residue on the aftertaste. There is outstanding volume to the concentrated, powerful and palate coating flavors that are supported by a firm acid spine on the tension-filled and massively persistent finish. This is a big yet well-balanced Bâtard that should age for a very long time yet be approachable after only 5-ish years or so.HK$7,950.00 -

(13.5% alcohol; 30% vendange entier): Dark red-ruby. Wild aromas and flavors of black raspberry, earthy spices and mocha, with an element of menthol freshness providing lift. Round, fat and highly concentrated; boasts outstanding richness and depth but will need extended aging to deliver on its inherent complexity. The crop level here was just 25 hectoliters per hectare, or less than the Chambertins. Most promising today on spicy, rising, edge-free finish, which saturates every square millimeter of the palate with salty minerality and dark fruits. This wonderfully silky, classy Bonnes-Mares is from stony, whiter soil on the Chambolle side of the cru.HK$17,175.00 -

(the crop level here was in the healthy 30-to-35-hectoliters-per-hectare range; entirely destemmed, as with the Chambertin, as Boillot was concerned that the stems were a bit green): Healthy dark red. Reticent, slightly medicinal aromas of cherry, flowers, spices and stone. Compellingly silky, fine-grained wine with terrific punch and lift; more explosive on the palate in the early going than the Clos Vougeot and classier too. Finishes refined and very long, with rather delicate tannins and terrific subtle flavor intensity and lift. This wine aged in 100% new oak but is not marked by the wood. It should enjoy a long life in bottle but there's nothing hard about it today.HK$5,720.00 -

(a single new 228-liter barrel): Bright pale yellow. Knockout nose combines white peach, nectarine, crushed rock and white pepper, with spicy oak in a complementary role. Penetrating, savory flavors of lemon, lime, peach and crushed stone convey an impression of power without weight. Really terrific fruit and mineral intensity here. Boillot's 2015 Clos Vougeot Grand Cru, which hails from the lieu-dit Grand Maupertui (neighboring Anne Gros' parcel), reveals a brooding bouquet of cassis, plum, musk and incense, framed by toasty new oak. On the palate, the wine is full-bodied and multidimensional, fresh and vibrant despite its considerable amplitude and power, with a fine-grained chassis of tannin and a long, sapid finish. This is a rich, lavish Clos Vougeot which should develop beautifully in the cellar.HK$10,645.00
We found the wines in 2015 very easy and forward to taste, with as much focus on freshness as concentration, so there wasn’t a complete break from the 2014s in that sense. The hope is that as the wines mature they will continue to show the balance and classicism they displayed from the barrel. Our expectation is that they will do so and the best wines will live for a very long time with a genuinely satisfying pattern of maturation throughout their life.
