It pours a highly reflective straw hue and is aromatically forward out of the gate, with savory appeal and notes of citrus oil as well as juicy ripe berries. The palate is juicy and inviting, with approachable silky fruit and a fine mousse. The 2007 Dizy-Corne Bautray is soft, silky and quite open. Lemon peel, mint, white flowers and white pepper are some of the notes that give the 2007 its distinctive brightness and energy. Equally polished on the palate, the 2007 is exceptionally silky and finessed in its tactile impression. A wine of classiness and total understatement, the 2007 should drink well for at least another 5-10 years, perhaps more. There is good brightness in the glass, but the wine’s structure is very much medium in body. A new bottle from Prévost, the NV Extra Brut & (LC18) is a blend that marries 20% Les Béguines with the balance deriving from other sites in Gueux that share the same sandy soils. It's based on the 2018 vintage, with some 20% reserve wines from 2017. The label is easy to distinguish thanks to the large red ampersand. Offering up aromas of pear, red apple, walnuts, fresh bread and mandarin, it's medium to full-bodied, layered and vinous, with a fleshy core of fruit and a saline finish. While it's produced from purchased grapes, Prévost farms some of the sites and determines the date of harvest and sorting, though he told me that the average yield is naturally a touch higher than in his own vineyards.HK$7,749.00 -

In this release, Beguines is a bit less angular and severe than it often is at this stage in its life. Dried apricot, sage and chamomile are some of the many nuances that open up in this distinctive and highly expressive Champagne from Jérôme Prévost. The 2018 Extra-Brut Les Beguines is a gorgeous Champagne from Jérôme Prévost. In this release, the Beguines is a bit more ethereal than it can be. There is plenty of Meunier character, with dried orchard fruit, spice and hazelnut flavors that are nicely lifted. This edition is 90% 2018 plus 10% reserve wines, all done in the 600-liter casks that Prévost favors. What the 2018 lacks in depth it more than makes up for with its charm and accessibility.
