08NF was made from 83% Grands Crus and 17% de Premiers Crus: 60% Pinot Noir from the Premiers and Grands Crus of the Montagne de Reims and the Grande Vallée de la Marne (Mareuil-sur-Aÿ, Aÿ, Ambonnay, Bouzy, Verzenay et Verzy); 40% Chardonnay from the Côte des Blancs (Mesnil, Chouilly, Cramant, Vertus); 17% of the wines were vinified in oak barrels, and it was aged on its lees for 150 months; The dosage is 2.9 g/l, and it was disgorged in January 2022. This super-deep wine dwells low in the glass with weight and depth of delivery that is completely unhurried. Vinous, powerful and with a full spectrum of fruit and patisserie, it is remarkable just how little citrus and herb there is on the front end of this staggeringly impressive wine. It is more layered and exotic than any current release Champagne I can think of, and then when it seems as though the scene is set, everything changes instantly. The palate drops about three gears revealing arresting zestiness and tanginess that completely engulfs the senses. I learned that this cuvée’s release was delayed by nearly two years because the back end was so twitchy, nervy and excitable. As it turns out, the Billecart gurus made the right call here – this is an electrifying wine, and the finish shows that the potential here is incredible. I am lucky enough to have tasted the 1959 and the 1961 Billecart-Salmon vintage wines, among others, and the DNA and detail in this 2008 are near-identical. While the top half of this wine is showy, flamboyant and seductive, the lower half is firm, chiselled, rigid and breath-taking.HK$6,850.00 -

On this vintage with a prolonged growing season Bollinger played the cool card, choosing to go with a high proportion of Verzenay fruit (51%). The combination of cool vintage and cool terroir is truly attractive for a blanc de noirs. Already the nose has lovely zingy fruitiness to it, lemon custard, perfectly ripe peaches and elegant spicy and chalky tones. The ensemble comes across as elegant, super juicy and purely fruity. Disgorged in September 2020 with four grams per liter dosage, Bollinger's 2008 Blanc de Noirs Vieilles Vignes Françaises is one of the monumental wines of this great vintage. Soaring from the glass with a generous, honeyed bouquet of pear, orange rind, dried fruits, mocha and toasted bread, it's full-bodied, textural and enveloping, with huge concentration, racy acids and a pillowy mousse. Vinous, rich and sumptuous, it concludes with an immensely long, resonant finish. The 2011 Brut Amour de Deutz is a gorgeous Champagne, especially for the year. Lemon confit, tangerine oil, brioche and tropical accents give the 2011 its extroverted personality. I would prefer to drink the 2011 sooner rather than later, just in case the vegetal notes typical of the year emerge, but today it is quite expressive. The 2002 Dom Perignon is at first intensely floral, with perfumed jasmine that dominates the bouquet. “It must be said that tastings take all shapes and forms, but tasting this wine was the single most extraordinary event of the year. I have written up a couple of Henri Giraud Champagnes in the last twelve months, and they are all masterpieces, but this wine takes the biscuit. As always, the Argonne forest plays a leading role in this wine’s makeup. Giraud uses new Argonne oak, lots of it, and great Aÿ fruit in perfect harmony to make astonishingly impactful wines. But this rosé uses a ‘few liters of extraordinary Aÿ Grand Cru Rouge’ to transform this white wine into a rosé, and the result is game-changing. I tasted this wine at Hawksmoor Seven Dials before a ‘Monday Night £5 corkage’ dinner. I then popped a stopper in it and brought it out during the main course, after a couple of stellar white Burgundies and before a Vieux Château Certan, a Grange and a couple of other impressive reds. Having already road-tested 2013 Argonne at The Clove Club earlier in the year and finding it one of the most gastronomically-skilled wines on the planet, I was confident that this insanely beautiful rosé would step up to the mark. And boy, it did not disappoint. But, as well as it romancing Hawksmoor’s finest steaks, I was more interested in the impression this wine made on the assembled wine aficionados. While I am familiar with the Henri Giraud legend, the other five fellows around the table were not. This meant they could comment on the flavour without getting hooked up in the impeccable presentation and astronomic price tag. We all agreed that this statesmanlike wine was like nothing we had ever tasted before. One of our brigade was so baffled and befuddled that he admitted defeat early on. He loved the flavour but, not surprisingly, couldn’t find a place to file it in his wine memory, so he bowed out. The other four chaps were spellbound, carving out ever more fantastical descriptors and admiration for this unique wine. There is no doubt that the artistry and individualism of the Henri Giraud range are shocking to many and, in some cases, polarising, but if you crave Champagnes of the very highest standards with tremendous depth of fruit and an all-encompassing and otherworldly presence on the palate, you must taste these wines. 2011 Argonne Rosé hails from one of the world’s most famous villages and is embellished with some of the most revered oak on earth. The fact that it is a sparkling wine is a detail, a mere delivery mechanism, a vector of flavour.
