The NV Champagne Brut Rosé is 92% Chardonnay from the chalky middle portion of the slopes within Avize, Cramant and Oger, with the still wine of Pinot Noir coming from Ambonnay. Pouring a golden orange hue, it’s elegant and medium-bodied, opening to refined aromas of fresh peach, orange blossom, orgeat, and saline. Crisp, linear, and vibrant on the palate, it takes on its chalky straightness with a silky texture of wet stone and has significantly more tension, as well as a long-lasting, salty finish. One of the pinnacles of the tasting with Selosse, unsurprisingly, is the NV Blanc de Blancs Grand Cru Substance, a wine with the most complex making, going through four stages of maturation: from barrels to the bottle. As always, it derives from a solera created in 1986. Originally, the wine was sourced from two parcels in Avize, but today the base wine (which eventually contributes only about 4.8% to the final blend in the bottle) is produced from a selection of plots in the village. Guillaume opted to include parcels that best fit the desired balance—sometimes these will be south-facing, other times east or even north-facing sites. Muscular and multidimensional, it jumps from the glass with a bouquet of kaleidoscopic complexity, featuring notes of orange zest, spices, beeswax, toasted hazelnuts and dried fig. On the palate, it is full-bodied, vinous and textural yet searingly chalky—even more mineral than Les Chantereines. Guillaume Selosse remarks that oxidation during maturation (and through multiple transfers between different vessels) frees the wine from fruit in a classic sense, leaving mostly chalky extract and enhancing its mineral aspect. Every time I taste at this great domaine, I vacillate between Substance and the lieux-dits as to which wine best defines this benchmark producer. From vines planted in 1962, the single-vineyard Jacquesson 2004 Extra Brut Avize Champ Cain leads with an utterly remarkable nose. A greenhouse-like profusion of leafing and flowering things is imposed over sea breeze, with jasmine; musky narcissus; nose-prickling spice as if from some exotic orchid; iodine-tinged toasted shrimp shells; and toasted grain all pungently present and anticipating the elusive complexity delivered on a caressingly polished yet consummately refreshing and almost ethereally delicate palate. Over time, the sense of creaminess and the refinement of bubbles became more evident, along with a contrasting impression of enhanced piquancy, suggesting hops and lentil sprouts, all in the context of remarkable poise and transparency to nuance. The endlessly fascinating finish remains infectiously juicy and subtly yet mouthwateringly saline. Lucky owners should plan to follow bottles for at least a decade. (And at around 10,000 bottles – twice the volume of the corresponding Corne Bautray and four times that of the Vauzelle Terme – there is at least a better chance you can get hold of some. I’m told, though, that only 118 bottles were allocated for the U.S., at least initially, which gives you an idea how regrettably few will have been shipped here of the other two Jacquesson single-vineyard gems.)HK$18,580.00 -

The Extra-Brut Cuvée No. 742, based on the 2014 vintage, is a gorgeous wine. In this release, the Cuvée seems especially marked by Pinot in both its flavor profile and texture. Dried pear, hazelnut, mint, chamomile and dried flowers all grace this rich, beautifully resonant Champagne from Jacquesson. Best of all, the 742 will drink well with minimal cellaring. The 700-series Champagnes are often superb; the 742 is an especially fine edition. The blend is 59% Pinot Noir (from Aÿ, Dizy and Hautvillers) and 41% Chardonnay (from Avize and Oiry). The palate is juicy and inviting, with approachable silky fruit and a fine mousse. The 2007 Dizy-Corne Bautray is soft, silky and quite open. Lemon peel, mint, white flowers and white pepper are some of the notes that give the 2007 its distinctive brightness and energy. Equally polished on the palate, the 2007 is exceptionally silky and finessed in its tactile impression. A wine of classiness and total understatement, the 2007 should drink well for at least another 5-10 years, perhaps more. There is good brightness in the glass, but the wine’s structure is very much medium in body. One of the things that stands out most is the silkiness and nearly imperceptible feel of the bubbles, especially as the wine opens up in the glass. Disgorged January, 2016. No Dosage.HK$7,725.00 -
