Champagne
Champagne, the epitome of elegance and celebration, is widely regarded as the pinnacle of sparkling wines. As one of the most prestigious wine regions in the world, Champagne has captured the hearts of wine enthusiasts and connoisseurs with its exceptional quality, refined craftsmanship, and iconic vineyards.
Historically, Champagne has been dominated by some world-acclaimed Champagne House, which source grapes and harvest from Champagne growers. These famous Grandes Marques include Louis Roederer (Cristal), Dom Pérignon, Krug, Moët & Chandon, Veuve Clicquot, and Bollinger, all of them are revered for their notable names that display unrivalled winemaking prestige and pedigree.
In the recent decade, the emerging Grower Champagne trend in Champagne is shaking up the industry by challenging the dominance of the big Champagne houses. These small-scale producers, also known as "Récoltant-Manipulant" or RM, grow their own grapes and produce their own Champagne, showcasing the unique terroir and character of their vineyards. Jacques Selosse, Ulysse Collin, and Champagne Vilmart & Cie are among the most prominent names in this trend, producing some truly artisanal and terroir-driven Champagnes.
Champagne is primarily made from three main grape varieties: Chardonnay, Pinot Noir, and Pinot Meunier. These grapes are carefully selected and blended to create a harmonious and complex flavour profile. Chardonnay contributes elegance, freshness, and finesse, while Pinot Noir adds structure, depth, and fruitiness. Pinot Meunier brings a touch of roundness and vibrancy to the blend.
The region of Champagne is divided into several distinct sub-regions, including Montagne de Reims, Côte des Blancs, and Vallée de la Marne. Each sub-region has its unique terroir, characterized by variations in soil composition and microclimates, which influence the style and character of the wines produced.
Champagne offers various styles, from non-vintage blends to vintage cuvées and prestigious prestige cuvées. While Non-vintage Champagnes typically epitomise the house style, the vintage Champagnes are made from grapes harvested in one particular year (top vintages such as 1996, 2002, 2008 etc), in which these wines showcase the unique characteristics of the specific vintage.
The prestige cuvées, often the flagship wines of the renowned Champagne houses, are the pinnacle of excellence. These exceptional Champagnes are created using the finest grapes, the most meticulous winemaking techniques and often benefit from extended ageing to achieve unparalleled complexity and finesse.
Champagne is synonymous with celebration, elegance, and luxury. Its effervescent charm and timeless appeal have made it the drink of choice for countless special occasions and memorable moments. With its rich history, iconic vineyards, and unrivalled quality, Champagne continues to captivate wine enthusiasts and connoisseurs alike.

Crisp apples and tight minerality come together in a satisfyingly ripe wine. It is young, showing its fruity side and only just moving to its future complexity. But this will be a fine, structured Champagne. Drink from 2022.HK$890.00 -

Pol Roger's 2008 Rosé Vintage is an impressively full-bodied, round and fruity as well as structured Champagne. Dressed in a beautiful salmon color, the 2008 opens beautifully clear, deep and fresh on the aromatic and spicy perfumed nose where red berry (raspberries!) and aromatic herbs are displayed. Full, intense and rich on the palate, this is an expansive, perfectly round, vinous and already accessible Champagne with power, structure and finesse. The finish is just excellent—fresh, with well-integrated acidity and a functional but not prominent mineral backbone.HK$1,340.00 -

Based on their Brut Vintage 2012 (60% Pinot Noir, 40% Chardonnay) to which is added 15% of still Pinot Noir from the best crus of the Montagne de Reims. Aged for six years in bottle before disgorgement. A relatively deep colour with a tomato (colour, not flavour) tinge. A really very opulent array of aromas. Serious grip on the finish. This is a serious rosé with ageing potential. Quite pungent and great balance. Very brisk and revitalising on the finish. Neat and long. This would be very happy at the table.HK$1,305.00 -

The 2015 Brut Rosé is compelling. Far from an easygoing Champagne, the 2015 Rosé possesses striking depth and layers of fruit that open beautifully with a bit of time in the glass. Crushed flowers, raspberry, blood orange, mint and spice all run through a substantial, super-expressive Rosé from Pol Roger that is ideally suited to the dinner table. Disgorged: November 2021. Dosage is 7 grams per liter.HK$4,045.00 -

Made from 60% Pinot Noir and the rest Chardonnay, with 15% red wine from Les Riceys, the 2018 Champagne Vintage Brut Rosé pours a bright but deeper shade of pink with an orange hue and is forward with aromas of ripe raspberry, rose petal, orange peel, and a hint of spice. Medium to full-bodied, it has broad shoulders and a bit of tannic grip, with a fine mousse that fades to the background, allowing the wine's more serious side to show off its style. Chalky and powerful on the palate, with wonderful clarity and a long finish, it’s going to move into its more savory side with another couple of years in the cellar. It will pair well alongside roast duck and through the end of a meal. Drink 2025-2045.HK$4,965.00 -

All grands and premiers crus. 60% Pinot Noir, 40% Chardonnay. Aged eight years on the lees.. Dosage 7 g/l. Disgorged 17 October 2016. Tasted blind. Rather simpler nose than the other vintage of Pol Roger tasted alongside [the 2009]. Lots of lemon on the palate – lemon soufflé. Then it falls away a little. Very brisk (a clue ignored?)! 2009HK$4,860.00 -

This rich, full-bodied Champagne is a classic from this producer. Its richness is emphasized by ripe Pinot Noir that dominates the blend, typical of the house style. A blend of grand and premier cru wines from across the Montagne de Reims and Côte des Blancs, this wine will age much further. Drink from 2022.HK$4,200.00 -

Pol Roger's just-released 2013 Brut Vintage is a beautifully chiseled, incisive wine that will appeal immensely to purists. Unwinding in the glass with scents of citrus zest, white flowers, crushed chalk and hints of fresh sourdoughs, it's medium to full-bodied, racy and precise, with a nicely concentrated and tightly wound core, tangy acids and an elegant pinpoint mousse. After the rich, muscular 2012 vintage, the 2013 represents quite a contrast; I'm not sure we'll see its stylistic like again for some time, so readers with classically inclined palates will want to stock up—advice I'll be following myself.HK$3,620.00 -

The 2015 Brut Vintage is a very pretty Champagne to drink now and over the next decade or so. Gentle hints of apricot, spice, dried flowers and baked apple tart lend quite a bit of nuance. There’s gorgeous vinous intensity to the 2015 accompanied by a whole range of citrus, floral and chalk overtones that emerge over time, adding brightness as well as cut. All the elements are so nicely balanced. Disgorged: November 2021. Dosage is 7 grams per liter.HK$5,710.00 -

Very tight, dense nose with some honey and orange notes on the palate. Already very drinkable with the acidity not especially noticeable, although presumably it will gain in aromatic complexity with bottle age. I found it less than enthralling when I first tasted it and gave it a score of 16.5 but when I was served a glass blind from my re-stoppered bottle a few days later, I was impressed. So is the lesson, don't rush your pleasures?HK$4,305.00 -
