The NV Champagne Grand Cru 3A Extra Brut is composed of 50% Chardonnay and 50% Pinot Noir from the three villages, all of which was picked on the same day. It features a 3-gram sugar dosage and a more gastronomic style and approach to the wine. I really love the nose of this one: it's a blend of pretty red strawberries, fresh apricot, light smoky earth, toast, and a hint of perfume. Medium to full-bodied, it’s round and fills the palate, offering ripe red fruit and apricot notes, a fine, pillowy mousse, and a clean, fruity finish, where the stone fruit shines. It’s zesty and fresh but also ripe. With fluidity and lovely energy, it’s very well-balanced and a very strong wine for De Sousa in this vintage. Drink 2025-2045.HK$2,975.00 -

The 2018 Soutard is an inky, exuberant wine. Raspberry jam, mocha, licorice, cedar and blood orange saturate the palate. Sweet floral/spiced top notes add lift, but Soutard is mostly a wine of textural resonance and creaminess. Ripe, silky tannins wrap around the succulent finish.HK$1,810.00 -

The 2021 Soutard unwinds in the glass with aromas of dark berries, plums and spices mingled with hints of violet and iris. I love this château, and the 2019 Château Soutard-Cadet is another brilliant wine that's in the same ballpark as the 2018. Sporting a deep purple hue as well as a rich, powerful nose of ripe black fruits, scorched earth, spicy oak, graphite, and damp earth, it's rich and concentrated, yet the purity is brilliant, it has silky and perfectly ripe tannins, flawless balance, and a great finish. As I wrote from barrel, it's going to benefit from just 2-4 years of bottle age and, I suspect, have 20, 25, if not 30 years of overall longevity.HK$1,480.00 -

Another incredible wine from Marie Lefévère, the 2020 Château Soutard-Cadet boasts a dense purple hue as well as awesome cassis and darker, almost blue fruits to go with lots of tobacco leaf, graphite, crushed stone, and background oak. It’s another medium to full-bodied, pure, seamless wine in the vintage that stays focused and elegant on the palate, with ripe, polished tannins. The purity of fruit is terrific as well.HK$1,515.00 -

I was able to taste the 2021 Château Soutard-Cadet on multiple occasions and it never failed to impress. Red plums, subtle cassis, graphite, and a beautiful sense of minerality define the aromatics, and it hits the palate with medium-bodied richness, a vibrant, pure, focused mouthfeel, nicely integrated tannins, and a great finish. It clearly has the fresher, cooler style of the vintage yet this has density and depth. It's a gorgeous wine that will benefit from just a few years in the cellar and keep for 15+ if well stored. The blend is 90% Merlot, 8% Cabernet Franc, and the rest Petit Verdot, raised in 70% new barrels (225- and 500-liter.)HK$1,200.00 -
