Jasper Morris Inside Burgundy (91-94)
5 Star Wine. From vines planted in 1902. Fine clear mid-purple in colour, this has a very classy nose and some deep sweet rich fruit. Then a fine fresh acidity behind. This is very exciting! Stunning bouquet of dark raspberry and nectarine, so the sunshine is clearly present, but this is gorgeously juicy rather than crass.HK$5,055.00 -

The 2020 Pommard Les Perrières is a cuvée where winemaker Xavier Horiot confessed that in retrospect, he would have liked to pick a week earlier. Granted, the aromatics feel quite high-toned and extroverted, which is not his style, though the palate is fleshy and well-balanced, quite harmonious with sufficient acidity to keep it in balance. Maybe Horiot was being a bit hard on himself - this is perfectly fine.HK$6,660.00 -
Vinous (84-86)
The 2021 Pommard Les Perrières has a fragrant nose with raspberry pastilles and light floral scents. Fine delineation and purity, though not complex. The palate is well balanced with sappy red fruit, moderate depth, just missing some flesh on the finish that feels a tiny bit underripe compared to other cuvées.HK$4,380.00 -

(5 Star Wine) Not too deep in colour, with rather a stylish perfumed raspberry fruit. Light fresh acidity, behind the beautifully balanced fruit, a few tannins too, but the fruit stretches out wonderfully behind them. The benefit of ancient vines is clear to see. Drink from 2030-2036. Tasted: November 2023.HK$8,800.00 -

Picked over several days. An even powerful purple. The nose has an exuberant deep ripe raspberry aspect, but not over the top, with amazing energy on the palate, dark raspberry glossy fruit with firm but fine tannins at the back. Very juicy. Drink from 2030-2036. Tasted Nov 2024.HK$4,640 - HK$5,670

The grapes for Damien Laureau's 2019 Les Genêts are grown on sandy soils over schist, giving a tenderness and richness of fruit. Matured on lees in barrels for 12 months, there's no mistaking the nutty, smoky influence of the oak over bruised apple fruit, rounding out the palate. It finishes well, offering sinew and structure, tidying and tightening up the palate. There's no mistaking the hand of the winemaker, which is evident at this stage but its schistose foundations provide the drive and frame in which this will age.HK$2,150.00 -

Fascinating. Bronze with a green hue on the edges, showing dried oranges, blond tobacco, menthol, patisserie, dried strawberries and pie crust. Smoky and complex yet subtle. Medium-bodied with fine bubbles and lots of flavor but tight and focused, giving it positive energy, tension and great length. Lightly bitter grapefruit at the end. Some candied fruit. Co-fermented 80% pinot noir and 20% chardonnay. Aged about 10 years on the lees. Dosage 7 g/L. Drink or hold.HK$16,095.00 -

A creamy nose promises a smooth opening, the scent of sweet-salt, hazelnutty crumble crust is mouth-watering. The palate is taut but tiny bubbles carry bright lemon zestiness to the tastebuds. It is this lemony serenity and clean-cut 2008 character that remains centre-stage throughout, with subtle autolysis in the background. Very elegant and lasting.HK$4,770.00 -

This is in a new bottle, like the stout ones used for the rosé and blanc de blancs. This is very structured with a density and richness with hints of strawberry to the apple character. Bubbles turn fine textured at the end. Delicious flavors of biscuits and dried apple in the finish. Special character to this because of the very ripe vintage. Disgorged in November 2021. This is half chardonnay and half pinot noir. This can age well due to the phenolics. Drink or hold.HK$3,615.00 -

Fairly pale color. Complex, soil-inflected, smoky nose combines pineapple, peach, apricot, rose petal, cinnamon and mace; reminded me of Condrieu. Fresh and ripe in the mouth, with impressively intense flavors of fruits and spices. Finishes strong and spicy, with a late note of pink peppercorn.HK$1,670.00 -

Incredible aromas of apple skin, pie crust, praline and flowers. So young in the nose. Full-bodied with super-fine tannins. It’s tight and refined, yet structured and intense. Really long and beautiful. Still shy. Wonderful finish. 12 years on its lees before disgorging. Three vintages in the blend – 2008 (65%), 2007 (25%) and 2006 (10%). 60% chardonnay and 40% pinot noir. It’s the highest percentage of chardonnay ever.HK$7,350.00 -
