On another level, the 2010 Chateauneuf du Pape is rock-star stuff, and is probably my favorite vintage from this estate to date. Deeply colored, it boasts masculine, meaty aromas and flavors of smoked herbs, pepper, licorice, lavender, crushed rock and blackberries to go with a full-bodied, concentrated and rich style on the palate. Bright ruby. A heady bouquet presents candied red fruits, garrigue, woodsmoke and cured meat, with an exotic Asian spice quality gaining strength with air. Deep, sappy black raspberry and boysenberry flavors show excellent clarity, with a hint of spicecake building in the glass. Nicely balances power and finesse and shows outstanding vivacity. I loved the 2015 Châteauneuf du Pape from Claire Michel and it’s a classic blend of 75% Grenache, 10% Syrah, 10% Mourvèdre and 5% Cinsault, mostly from rolled stone terroirs, that was partially destemmed and brought up all in foudre. It’s a downright sexy, voluptuous 2015 offering textbook notes of kirsch liqueur, ground pepper, herbes de Provence, and incense. It picks up more dark fruit with time in the glass, is full-bodied, has plenty of fat and glycerin, and ample tannin, although they’re so polished you have to hunt for them. This gorgeous example of traditionally made Châteauneuf du Pape that’s going to drink beautifully for 15+ years.HK$5,505.00 -

Coming from three terroirs with chalky soils, the 2017 Champagne Millésime Abyss Brut Zero is always equal parts Pinot Noir, Meunier, and Chardonnay, and following disgorgement, this wine was rested in the ocean off the coast of Brittany for 10 months at 60 meters below the surface. It opens to beautiful aromas of saline layers and fresh croissant, as well as notes of honeydew melon and fresh flowers. Just an excellent Champagne that has real character, more minerality than fruit, moving towards saffran and quince. A more challenging vintage in Champagne than the 2012, but this has the charm that comes with bottle age, with a grilled almond edge, still with citrus and white flower undertones. Beautiful.
