Les Chétillons articulates its mineral birthplace with greater precision than anywhere in Champagne outside the thundering single vineyards of Krug itself, and no vintage expresses this more exhilaratingly than 2008. Its length is in another league, navigating undeterred for minutes, propelled by an acid line that shimmers like jet exhaust.HK$15,725.00 -

The 2009 Cuvée Spéciale Les Chétillons is remarkably polished and balanced throughout, with plenty of vintage 2009 radiance. Apricot pit, smoke, peach and spice overtones take shape in a striking Champagne. Although quite open and expressive today, the 2009 is also holding back a considerable amount of pure, unbridled power as well as potential. Ripe and racy to the core, yet with no excess weight, the 2009 stands out for its exceptional balance. Dosage was 4.7 grams per liter, a bit higher than normal. Péters told me he thought the drier vintage needed a little bit more sugar. Disgorged December 1, 2014.HK$22,275.00 -

Aromas of crushed chalk, dried white flowers and lemon oil introduce the 2011 Blanc de Blancs Grand Cru Les Chétillons Cuvée Speciale, a bright, medium to full-bodied wine that's as pure and incisive as usual, with a delicate but tight-knit core that's structured around a tangy line of acidity, concluding with a precise, searingly mineral finish. It's an elegant, understated vintage of Les Chétillons that will come into its own with five or six years on cork.HK$14,165.00 -

The 2012 Brut Cuvée Spéciale Les Chétillons is just as impressive as it was earlier this year, although it appears to have shut down a touch since then. That is not a problem, though, as readers should not be thinking of opening a bottle anytime soon. Bright, creamy and explosive, the 2012 packs a serious punch. It is also painfully austere and in need of cellaring. Readers who can find the 2012 should not hesitate, as it is truly special. Dosage is 4.7 grams per liter. Disgorged: January, 2019.HK$2,470.00 -

The 2013 Brut Cuvée Spéciale Les Chétillons is outrageously beautiful. I remember tasting it as vin clair in March, 2014. Today, as a finished Champagne from bottle, the 2013 captures all of the intense ripeness and bright acidity that make this vintage so exceptional. A wine of cut and brilliance, the 2013 will thrill readers who enjoy Blanc de Blancs. Citrus, marzipan, slate, crushed rocks and floral notes pulse with tremendous energy. Readers will have to be patient with the 2013. It is a total knock-out. Wow! Dosage is 3.5-4.5 grams per liter. Disgorged: April, 2020.HK$14,530.00 -

The 2015 Champagne Les Chetillons Brut is delicate but expressive, with white flowers and a hint of confectionary sponge cake aromas. It is a pale straw with a shimmering green hue. Coming off the heels of the 2014 vintage, this is comparatively much more generous and open and is a pleasure to drink now. It has its hallmark stamp of Chetillon despite the warmth of the vintage and is not overblown. Drink 2023-2043.HK$2,290.00 -

The 2016 Brut Cuvée Spéciale Les Chétillons is an explosive, heady wine. It is, to me, a quintessentially modern Chétillons that offers plenty of Mesnil energy, yet also has more than enough fruit to avoid any feeling of the austerity that once characterized these wines. Crushed rocks, slate, mint, lemon peel and white flowers are all beautifully delineated throughout. The decision to delay the release of this wine by a year going forward seems very well judged. Today, the 2016 is showing so much better than it did last year. Dosage is 4 grams per liter. Disgorged: July 2023.HK$2,620.00 -

Vivid ruby-red. Spice-accented red and blue fruits and candied flowers on the expressive nose. Juicy, open-knit raspberry and boysenberry flavors become livelier as the wine opens up. Shows very good clarity and lift on the long, smooth finish, which features supple tannins and resonating red fruit character.HK$3,345.00 -

Mostly Grenache yet with 15% each of Syrah and Mourvèdre, with 10% Cinsault, the 2019 Châteauneuf Du Pape boasts a vivid purple hue as well as a complex bouquet of red, blue, and black fruits as well as notes of flowers, spice, and peppery garrigue. It actually reminds me of the Cuvée Mon Aïeul with its ripe yet elegant profile. Full-bodied, balanced, and lengthy, it’s going to offer loads of pleasure over the coming 10-15 years.HK$1,830.00 -

More precise and focused than the more exuberant, sexy and rounded '00, the 2001 Chateauneuf du Pape Cuvee de Mon Aieul is borderline perfection (I seriously considered adding a point here) and a monumental Chateauneuf du Pape that is drinking at point. Kirsch, olive tapenade, roasted meats, tobacco and assorted mature Grenache characteristics give way to a full-bodied, massively endowed, concentrated, gorgeously layered wine that's just about as good as it gets. I kept coming back to this over the evening and it got better and better with air, so while fully mature, it's not going anywhere soon.HK$11,640.00 -

The best bottle of this I've had (and I've had plenty), Usseglio's 2003 Chateauneuf du Pape Cuvee de Mon Aieul is a blockbuster and one of the true stars of this vintage. Almost all Grenache (there's a small part of Syrah and Cinsault) that was harvest between September 1-13, partially destemmed and aged in both tank and foudre, this massive, voluptuous effort is almost overflowing with notes of ground herbs, chocolate dusted meats, black fruits and licorice. Showing none of the negative traits of the vintage, with beautiful purity and freshness, sweet tannin, and a great finish, enjoy this utterly hedonistic beauty over the coming 4-5 years.HK$5,390.00 -
