Crushed stone, mint, blackberries and cassis all appear upon the nose of the 2020 Ermitage le Pavillon. The great vintages of these wines soak up the oak, like this one has. Full-bodied, concentrated and massive in scale, it's a mouthful of dark fruit flavors that gradually morph into something more savory on the long, silky-firm finish, adding notes of black olives and espresso. It's really impressive, as it maintains a sense of elegance all along its path.HK$11,000.00 -

A profound and utterly gorgeous wine, the 2022 Ermitage Le Pavillon reveals notes of ozone, graphite, asphalt, ripe black fruits, and leather. Full-bodied, concentrated, and rich on the palate, it has plenty of ripe tannins and a blockbuster finish. Coming all from the Les Bessards lieu-dit located on the western side of Hermitage, this beauty was 85% destemmed and spent 18 months in a mix of demi-muids and puncheons. It has riveting purity, depth, and length, and certainly tops out my scale. Hide bottles for 7-8 years and enjoy through 2062.HK$2,345.00 -

A subtle suggestion of graphite creeps in on the long, supple finish.HK$5,985.00 -

A wine I've been lucky enough to have multiple times recently, the 2012 Ermitage les Greffieux is a full-bodied, deeply fruited, concentrated and blockbuster effort that's stays elegant, polished and balanced. Exhibiting incredible amounts of bloody meat, olive tapenade, campfire and sweet, expansive fruit, it needs 4-5 years in the cellar, and will drink nicely through 2034.HK$5,320.00 -

Inky ruby. Vibrant, sharply focused aromas of fresh dark berries, licorice, incense, exotic spices and candied violet on the highly perfumed nose. Seamless and energetic on the mineral-accented palate, which offers vivacious red and blue fruit preserve and floral pastille flavors that deepen and turn spicier as the wine opens up. Closes on a resonating mineral note, with slowly building tannins, lingering florality and remarkable persistence.HK$1,255.00 -

Opaque magenta. Powerful, mineral-accented red/blue fruit liqueur, incense and potpourri aromas acquire exotic spice, cola and licorice nuances with aeration. Sappy, focused and deeply concentrated yet animated as well, offering alluringly sweet blueberry, Chambord, cassis and candied floral flavors that are given back-end cut by smoky mineral and spice flourishes. The mineral and floral notes drive an extremely long, finely etched finish, where integrated tannins provide shape and gentle grip. As is usually the case in warm vintages, this is the most elegant example of Chapoutier's Sélections Parcellaires .HK$1,270.00 -

More game, bacon fat, truffly earth, and both red and black fruits emerge from the 2020 Ermitage Les Greffieux, another deep, rich, incredibly concentrated wine from this estate. Coming from the more sedimentary soils at the base of Hermitage, destemmed and aged in 20% new oak, this full-bodied, monster of a wine has sweet, velvety tannins, a huge mid-palate, and a gorgeous finish. This is up there with the finest vintages of this cuvée I've tasted. Give bottles 5-7 years, count yourself lucky, and enjoy over the following 20-25 years.HK$5,390.00 -

Cask sample. Fascinating nose, gravel and spice and lifted balsamic notes as well as cassis and crushed rocks. Needs a few years but is hugely expressive on the nose and on the palate. (AC)HK$1,310.00 -

The blended white Hermitage—the 2017 Hermitage Chante-Alouette—is a terrific wine this year, maybe the best I've ever tasted. Honeyed pear and citrus notes lead into a full-bodied, brassy-hued wine with a rich, velvety texture. It's lush, broad and mouthfilling, with a long, harmonious finish. While delicious now, expect it to close up within another year or two, only to reopen once it hits about age ten.HK$1,385.00 -

Inky ruby. Intensely aromatic cherry and dark berry aromas are complemented by hints of licorice, peppery spices and cola. Deeply concentrated but taut dark fruit flavors show a suave blend of power and vivacity, and a mineral nuance adds lift. Gains heft and sweetness on the clinging finish, which features a smoky mineral quality and fine-grained tannins that come on slowly.HK$4,390.00
