The palate is medium-bodied with finely-chiselled tannins, one of the most mineral-driven in Dujac's range, precise and detailed, a pinch of spice, harmonious and quite persistent on the finish. The 2022 Gevrey-Chambertin Aux Combottes 1er Cru is one of Dujac's strongest cards, and in this vintage, there's no change there. It has a beautifully defined bouquet with mineral-rich red fruit, subtle iris flower scents and a hint of sous-bois. It has more energy than an over-excited puppy. The palate is medium-bodied with a well-knit opening, harmonious with white pepper and clove-infused black fruit. It has fine backbone, precise and edgy on the finish that lingers long in the mouth. Tasted blind at the Burgfest 2014 tasting, the 2014 Morey-Saint-Denis 1er Cru from Dujac was one of the talking points of the tasting. It performed extremely well compared to its peers (note that this is a domaine bottling and not Dujac Fils & Père). It has quite an intense bouquet with signs of some whole bunch addition but backed with plenty of dark red fruit. The palate is medium-bodied with good body and substance, well-judged acidity, perhaps with the whole bunch defining the wine more than the terroir at this early juncture, although that will not always be the case. Give this time in bottle if you want the birthplace of this wine to express itself. Dujac lovers should have some of this in their cellars—very, very impressive. Tasted September 2017.HK$17,820.00 -

The palate is medium-bodied with sappy red fruit, fine balance and finer tannins than Taupenot-Merme's La Riotte. The 2018 Morey-Saint-Denis 1er Cru has a feisty tart nose with kirsch and blood orange, initially not speaking of its appellation though that does evolve with aeration as it gains personality. The palate has a bitter entry, hard and rather coarse tannins, very drying towards the finish. Not sure about the future of this Morey - will it knit together? It will go either way. Bright, deep red-ruby. Briary black raspberry, smoke and mocha on the musky nose. Dense, musky and sweet, with a hint of malic acidity giving an edge to the black raspberry, mineral and chocolate flavors. Finishes with substantial dusty tannins. This cuvee got a total of just two pigeages, as the fruit needed a gentle extraction owing to some drought stress, according to Jeremy Seysses.HK$3,665.00 -
