Fresh pale green tint. Didier describes this as the entry level grand cru. The average age of the vines is at or above 60 years. There is admirable tension here, an electric start, more middleweight through the middle, then quite a powerful middle with decent dry extract, and good length. Keeps coming back. A cool and highly restrained nose reluctantly offers up its array of citrus, tidal pool, quinine and oyster shell. The exceptionally rich, even opulent, medium-weight plus flavors also brim with sappy dry extract on the mineral-driven, powerful and remarkably long finish. This is perhaps slightly less elegant than it typically is, but it is most impressive all the same. (93-95)/2033+HK$5,430.00 -

The 2022 Chablis Grand Cru Les Clos is a serious, structured wine, unwinding in the glass with aromas of ripe, waxy citrus rind, crisp orchard fruit and white flowers, framed by a deft touch of youthful reduction. The 2021 Chablis Les Preuses Grand Cru comes from 2.5-hectares split over two parcels. This has one of my favourite aromatics from Fèvre this year with superb delineation and mineralité. The palate is harmonious and poised, very focused and tensile, plenty of energy with a touch of lime and clementine towards the persistent finish. This is an outstanding Chablis that should age supremely well in bottle.HK$7,500.00 -

The 2022 Chablis Les Preuses Grand Cru has an exquisite bouquet, with wonderful delineation and succinctly integrated oak, lemon curd, apricot and crushed stone unfolding in the glass. The palate is fresh and sapid on the entry. There is a real linearity to this Chablis, with wonderful oyster shell notes and a persistent and tender finish. Superb. Bottled under Diam 10.
