The 2021 Graacher Himmelreich Spätlese is very clear, bright and elegant on the saline and beautifully balanced nose that delivers bright and quite intense fruit aromas intermingled with weathered slate and also citrus aromas. On the palate, this is a round and intense, mouth-filling and lush, almost creamy-textured Himmelreich with a long, complex and saline finish. It needs some time, though. 7.5% stated alcohol. The 2020 Wehlener Sonnenuhr Auslese is intense and complex on the still introverted but complex nose that shows clear, bright fruit aromas (baby pineapple) intermingled with fine, flinty slate notes. What an aristocratic appearance! Round, crystalline and saline on the palate, this 2020 Auslese is much more openhearted and fruity as well as frisky and frivolous than it pretends to be on the nose. This is a really Catholic Riesling or a picture-book Wehlener Sonnenuhr Auslese. Its finish, however, is Protestant: rigorously linear, straight and with serious structure and grip. The 2021 Wehlener Sonnenuhr Auslese is concentrated and fresh on the aromatic nose that is immediately present but also still reductive. Ripe stone fruit aromas intermingle with notes of crushed stones on a deep foundation of aromas from the soil and the fruit of old vines. On the palate, the 2021 is very fine but also intense, savory, saline and lush, leading to a long, intense and highly digestible finish with crunchy and cleansing slate features. The 2020 Wehlener Sonnenuhr Kabinett offers a discreet and sublime, complex and very elegant and slightly flinty nose with a coolish and very delicate expression of stewed apricots but also some greenish berries, whereas the first stony character remains. This irresistible and noble bouquet leads to a round and lush yet also refined and savory palate, with coolish apricot flavors on the long and sustainably salty finish that is firmly structured but elegant and highly stimulating. This is a superb, very elegant and complex, sustainably structured Sonnenuhr. This is already a great pleasure to drink, but you can keep this Kabinett for more than three decades easily. 8% stated alcohol. Natural cork. The 2021 Wehlener Sonnenuhr Kabinett is deep and flinty but bright and clear on the refined and elegant nose with beautiful crushed slate aromas. On the palate, this is a rich, round and generous, incredibly lush and supple but crystalline and even pure Sonnenuhr with a highly stimulating, mouth-watering finish. This 2021 shows the great terroir of the cru, in particular in cool vintages due to its exposition that collects the sun's rays in the morning. 7.5% stated alcohol. Natural cork. Jeb Dunnuck (94)
Moving to the three Cornas releases, the 2018 Cornas is brilliant and certainly in the same ballpark as the 2016 and 2017. Lots of red and blue fruits, smoked earth, graphite, iron, violets, and gamey notes define this full-bodied Cornas. With ample tannins, fabulous balance, and a big finish, it's going to need 4-5 years of bottle age at a minimum yet should drink fabulously well over the following 15 years.HK$1,425.00 -

Tasted from bottle, Drouhin's 2017 Beaune 1er Cru Clos des Mouches Blanc is showing very well, offering up aromas of fresh pear, Meyer lemon and grapefruit zest that are still quite youthfully marked by a generous application of buttery new oak that experience shows will integrate nicely with a little age. On the palate, the wine is medium to full-bodied, satiny and textural, with racy underlying acids, a fragrant core of fruit and a long, penetrating finish. This is a very elegant, aromatic rendition of this emblematic Drouhin cuvée.HK$10,110.00 -
Jasper Morris Inside Burgundy (94-97)
Pale lemon colour. The power is immediately apparent on the nose, but in a good way. A wine for longer elevage before bottling and then worth the wait in bottle thereafter. This has all the expected volume of white fruit while retaining impeccable balance. Adds depth with time in the glass, before reaching quite a saline finish. A very youthful but impressive Clos des Mouches. I recently enjoyed a stunning bottle of the 2017, and this could very well match it in due course. Tasted: November 2021HK$9,120.00 -

Blackberry and black chocolate with mint, conifer and clove. Sweet tobacco, violets and flowers, too. Some graphite. Cool and complex. Full-bodied with ultra fine, dusty tannins and a wonderful, extremely long finish. Savory and refined. A classic-styled 2018. This needs time, but is so approachable and gorgeous. One of the best Insignias ever. Alive and changing all the time. 40% Stags Leap AVA. 87% cabernet sauvignon, 8% petit verdot, 3% malbec and 2% cabernet franc. Kaesler’s icon cuvee is their Shiraz Old Bastard, produced from a single vineyard planted in 1896, and aged 22 months in 100% new French oak. The 2004 is a big yet remarkably elegant, deep purple-colored Shiraz offering notes of blueberries, black raspberries, and toasty oak, a superb texture, admirable richness, and a long, heady finish. There is plenty of tannin lurking beneath the cascade of fruit, glycerin, and extract. While accessible, it is too young to drink at present, and is meant to keep for 2-3 decades. This certainly is a deep, broody exotic expression of Cabernet Sauvignon that is more reminiscent of a cool vintage Napa Valley Cabernet Sauvignon than anything from Bordeaux or the Cape. Opened and tasted over 4 to 5 hours, the wine hits its stride surprisingly quickly with plenty of perfumed purple flowers, violets, bruleed black berries, baked blueberry crumble, crème de cassis and a pleasing note of mocha and vanilla pod spice. Initial notes of kelp and maritime seashore salinity quickly give way to a more weighty, sensual melange of black berry compote nuances and hints of cherry kirsch liquor. While this wine certainly shows all the deft elegance and finesse we associate with the 2017 vintage, it also displays a certain extra gravitas, power and weight of fruit concentration combined with great poise, density and a seamlessly textured mineral graphite finish. This is a dark horse that will drink well on release and age deceptively well for 20+ years.HK$2,400.00 -

Edi Kante is a pioneer when it comes to the indigenous grape Vitovska, which is grown just across the border in Slovenia. The soil here in the Carso is ferrous-rich and chalky. 2016 was a balanced vintage for these 20-year-old vines, and the wine was fermented and aged in oak for 12 months to create a delicate and silky wine with lime, lemon juice and gypsum powder on the nose and a light and super- refreshing acidity in the mouth.HK$1,938.00 -

The maiden 2015 Amphitheatre has an intense bouquet of dark cherries, star anise, camphor and wild heather scents, all well defined and expressive. This has a gorgeous, lifted nose that combines perfumed fruit and oak spice to heady effect. Soft, plush and fresh on the palate, with pinpoint raspberry acidity and lingering rose perfume. It’s matured in barriques and 500-litre French oak barrels, half new, the other half recently used – the oak plays an integral part and it’s applied with great skill. Krug 2006 Vintage is bright, tense and full of energy. Lemon confit, pastry, chamomile, dried flowers and tangerine oil all race out of the glass. The breadth of the Pinot comes through on the mid-palate and finish, as the 2006 gains power and resonance with a bit of aeration. Light tropical inflections, along with hints of almond and spice, open up later, adding further shades of nuance. Although it has just been released, the 2006 is unusually open and a real pleasure to taste today. In most vintages, Krug demands cellaring, but in the 2006 readers will find a Krug Vintage that is superb, even in the early going.HK$14,245.00 -

This is very structured and framed with an almost red sensibility. Very phenolic. Full-bodied in a tightly wound ball with so much going on. Very pinot like. Mineral and stone. Shell and stone.
