Domaine de Montille in the Cote de Beaune was developed by Hubert de Montille in 1951. His family have aristocratic roots in the region’s land since the 17th century. Now run by his son, Etienne, they use traditional wine making techniques to produce pure elegant Burgundy that generally requires five years bottle ageing.

(vinified entirely with whole clusters and aged in 35% new oak; the average vine age here is 65 years and the soil features gravel on limestone): Bright medium-deep red. Deeply pitched, fruit-driven aromas of black raspberry and dark cherry, plus a hint of smoky minerality. Wonderfully plush yet lively, displaying more volume and depth than the Mitans. Lovely silky Volnay without any impression of undue weight. Really fills the mouth and echoes on the finish while maintaining superb vivacity. Here the acidity is ripe and the broad tannins distinctly suave and fine-grained. This is showing beautifully considering that it only finished its malolactic fermentation in September.HK$3,810.00 -

Like the Mitans, this was made with 100% whole clusters in 2020. Rose petals and a touch of musk scent the nose, followed by a pristine pure palate of mulberries and soft red plums. This cuv e tends to be much firmer than the Mitans, but this year the tannins are unusually streamlined and rounded. The plush fruit's baby fat helps to cushion their usual vigor at this stage. The medium body is pulled into line by bustling acidity. This is one to enjoy over many years down the road. 2024-40HK$7,390.00 -

The 2021 Volnay Taillepieds 1er Cru has a touch of reduction on the nose, but it does not occlude the complex red berry fruit, crushed stone or shucked oyster shell scents that develop in the glass. Very nuanced and focused. The palate is well balanced with a patina of oak, though it is simpatico with the fruit. The 2009 Vosne-Romanee Les Malconsorts graces the palate with finesse and nuance to spare. Hints of graphite, spices and crushed rocks add complexity to the fruit, but this is ultimately a wine of texture above all else. Silky tannins frame the highly expressive finesse. The 2009 Malconsorts has really come together over the last six months. It is more immediate than the 2010 tasted alongside it, but in a perfect world a well-stocked cellar would have both vintages. The Vosne-Romanée 1er Cru Les Malconsorts 2011 has a beautiful perfumed, floral bouquet that opens immediately with bright red cherries, fresh strawberry, minerals and just a tincture of burnt toast. The palate is medium-bodied, perhaps just a little green around the edges, structured and masculine with an aloof finish that will need time to mellow.
