Highland Park Distillery is one of the world’s greatest single malt whiskies. In 2018, Highland Park ranked 2nd behind only Macallan in volume of auction sales. Located on the island of Orkney, the distillery was founded in 1798 by Magnus Eunson. Eunson was a colourful character who was a butcher and church warden by day and an illicit whisky smuggler by night!
Highland Park is the only distillery to use peat from Orkney in the distillation process. This gives the resulting whisky its iconic smoky, slightly sweet flavour, rather than the briny, medicinal peatiness more common in Islay whiskies. Today it is one of the world’s most recognised and collectable whiskies.HK$134,750.00 -

(6x50cl) 1993Vinous - Neal Martin (93)
The 1993 Tokaji Essencia was a miniscule maiden release of 400 bottles, so this is now extremely rare, a handful remaining in Mád. It contains 580 g/l residual sugar and 18.1 g/l acidity. There is a slight turbidity here, as it is believed that the 1993 did not go through a precise clarification. It has a slightly more tertiary nose, revealing hints of damp loam that percolate through the fig, date and marmalade scents. Later, there is a subtle estuarine element. The palate is surprisingly light on its toes, with fine tension and vitality. High acidity maintains a sense of energy, though this just tapers towards the finish unlike and leaves a slightly bitter residue.HK$16,990.00 -
(6x37.5cl) 1999Vinous - Neal Martin (96)
The 1999 Tokaji Essencia contains 552 g/l residual sugar and 17.7 g/l acidity, with slightly elevated alcohol though it still clocks in at just 2.9%. This displays a dark amber hue like the 2000, although it does not possess quite the same degree of complexity: fig and sloes, a little smoke and elements of dried flower. The palate is marvelous and in some ways has aged better than the aromatics. It is beautifully balanced and very pure, again with fig, marmalade and a touch of prune. The acidity keeps everything fresh and balanced, though perhaps the 2000 has a tad more precision on the finish. Just a lovely Essencia.HK$17,035.00 -
