The 2016 Vintage Port is a field blend originally seen about a week before bottling. It comes in with 104 grams of residual sugar. Not a lot has changed except that it seems even more approachable and much better balanced now. It also seems drier than its statistics would suggest. Tight and intense on first taste, this comes around relatively well with a couple of hours of air on the first day tasted, but it isn't expressive until a couple of days later. The initial firmness moderates to some extent, showcasing a relatively approachable young Port. (That doesn't mean it is ready or close to it.) The concentration seems good enough now, so that the hints of alcohol that I saw in June—and again this time around when this was in its first 90 minutes of aeration—seem under much better control. The balance is just more appealing. It shows beautifully with a couple of days of air. As with all Ports of any quality, this could use some time. This is gripping, but it won't sear your mouth with tannins. You are going to have to cellar it awhile to allow it to acquire more complexity and more harmony, though. D'Oliveira's 1977 Terrantez Madeira is powerful, dense and explosive right out the gate. What a stunner. Caramel, dried fig, crushed flowers, menthol and licorice stain the palate. Rich and layered in feel, with tremendous persistence, the 1977 dazzles from start to finish. Beams of tannin support the layered, expansive finale. I would be thrilled to own this.HK$9,825.00 -

Full medium ruby. Roasted black raspberry and cassis lifted by musky espresso and an exotic smoky, peaty element. Dense and rich; sweet and approachable but with shape and grip. The palate is simply glorious. It is built around a compelling tannic frame that seems finer than any Dow’s I have encountered apart from the ethereal 2011. There is so much energy coiled up in this Port, a sense of symmetry that is enthralling and yet you just know that it needs to be cellared for 15-20 years for it to reveal its full potential. Another old, rare and concentrated Sherry, the NV La Bota de Palo Cortado Bota Punta 48 is a single-cask, very old (around 70 years of age) Palo Cortado originated in the vineyards of Gaspar Florido in Sanlúcar de Barrameda. It aged for a long time allowing it to gain concentration over time, most probably with a few years under flor in its youth. It's sharp and pungent, really intense in the palate. It has notes of cigar ash, hints of malted cereals, peat, and smoke, with a super-intense palate with persistent flavors and an extremely salty, really concentrated ending. Navazos releases a super-old wine from time to time, and this time it's the turn of an Amontillado from Montilla-Moriles, produced with Pedro Ximénez grapes and sourced from the Pérez Barquero winery. It's presented as NV La Bota de Amontillado 73 “Bota Aniversario.” These old wines are always very concentrated and powerful, and the challenge here is to find one that is balanced. A similar wine was bottled as La Bota 26 to celebrate the fifth anniversary of the project, but it was never sold and instead was used for gifts for the core of Navazos customers from the bota 1. That 26 was taken from the bota 'No', and this 73, in order to not empty cask number 8 (the bota 'no'), was blended with cask number 3. Despite being bottled with some 21% alcohol, this wine is supposedly not fortified, and the alcoholic degree is achieved by pure evaporation and concentration through old age. This is getting the character of a very old wine, with hints of rusty nails and noble woods, a volatile touch and lots of nut notes. The palate is powerful, with volume, sharpness, elegance, intensity and a very long finish with echoes of low tide and rusty nails. A unique wine. 1,100 half bottles produced.HK$3,930.00 -

A whisky of renowned purity and finesse, Fettercairn’s classic style is achieved courtesy of a unique still cooling process by which irrigation tubes drench the stills in cool, pure water, cooling the copper causing the harsher oils and phenolic in the vapour to fall back into the still, rather than proceed into the spirit safe.

Fonseca has scored in both the 1991 and 1992 vintages. The 1992 is a majestic young port that should ultimately rival, perhaps even surpass this house's most recent great efforts (1985, 1977, 1970, 1963). This colossal vintage port reveals a nearly opaque black/purple color, and an explosive nose of jammy black fruits, licorice, chocolate, and spices. Extremely full-bodied and unctuously-textured, this multi-layered, enormously-endowed port reveals a finish that lasts for over a minute. It is a magnificent port that will age well for 30-40 years.
