Handpicked from estate-owned vineyards, the Cabernet Sauvignon grapes benefit from optimal terroir, characterised by gravelly soils and a favourable microclimate. The vinification process employs traditional French techniques, including fermentation in temperature-controlled stainless steel tanks to preserve the varietal's integrity, followed by maturation for 18 months in French oak barrels, imparting nuanced tannins and complexity. Produced by Château Le Riche, a family-owned estate with a legacy spanning over a century, this reserve showcases their unwavering commitment to excellence and sustainable viticulture. Packaged in a heavy glass bottle, the 2021 Stellenbosch Cabernet Sauvignon Reserve is spicy, dark and very riche (pun intended). The wine shows concentrated fruit enhanced by peppery notes and smoky spice. Generous oak rendering adds savory hints of scorched earth. I love the chalky tannins on this full-bodied wine. This Reserve is only made in the best years. Grapes are hand-selected from low-yielding old vines. It spends up to 14 days on the skins with manual punch-downs for gentle color extraction. It then goes into barrel for secondary fermentation, remaining in oak for one year. The final blend is then made and the wine is put back in barrel for another year, plus one year in bottle. Serre Nuove is the estate's second wine. It is made from barrels that are culled out of the selection process for Ornellaia with most of the fruit coming from the estate's younger vines. The 2004 Serre Nuove offers beautiful harmony in its ripe fruit, outstanding length and fine tannins. The 2011 Le Serre Nuove dell'Ornellaia comes across as tight and shut down today. There is plenty of depth in the glass, but less of the appeal I saw just a few months ago. The high tannins of the vintage and the relatively large amount of Petit Verdot (14%) are both very marked at this stage in the wine's life. Readers holding the 2011 are best off cellaring their bottles for at least another 1-2 years. The 2011 Le Serre Nuove is a powerhouse.HK$2,735.00 -

Excellent, full of energy and grip, love the lift here. Love that here you feel these Bordeaux grapes have a reason for being, they are bringing their own character and intensity, and feel like you are in coastal Tuscany, with dried herbs, fennel spice, raspberry, just a lovely lovely wine. You'd be super happy to open this now, but you can keep it. Higher Merlot than usual in this, and yet the tannins are present, providing a channel for the fruit to go through. 30% new oak, held back for six months in bottle.HK$2,750.00 -

Bright ruby. A heady bouquet presents candied red fruits, garrigue, woodsmoke and cured meat, with an exotic Asian spice quality gaining strength with air.
