The 2016 Fleur de Pédesclaux has a generous, rounded bouquet of wild strawberry and blackberry fruit mixed with briar and tobacco aromas. The palate is medium-bodied with a pastille-like purity on the entry, displaying fine tannin and light grip but offering ebullient red berry fruit on the detailed finish. The 2022 Monk originates from dark red granite soils with high silt and iron content, contributing to its dark, introverted personality. Despite this brooding start, it slowly unfurls in the glass with anise, cardamom and hints of dark fruit, although fruits generally are not in the foreground of any wine in this roster. In the mouth, it offers the deepest and most muscular palate while maintaining a seamless, slender texture, concluding with a powdery, glacial finish of drying mineral intensity. Within the Parra roster, this is one wine I would recommend cellaring for an additional year or two.HK$1,930.00 -

The single-vineyard Cinsault 2021 Newk was named for musician Sonny Rollins Newk, for Parra, the wildest jazz musician of recent times. He says he finds the wine wild, full of energy and minerality. It was produced with grapes from an old vineyard in Guarilihue that is worked by horse, from vines planted on decomposed and rocky granite soils with some iron and a sandy and silty texture. It fermented with 100% full clusters after four or five days with native yeasts and a total maceration time of 55 days, then the wine matured in an oak vat for 11 months. It has 13.5% alcohol and is austere and sharp, mineral and stony. It's a bit reductive and opens up to notes of fresh blood and iodine, a little Gonon with that herbal side. The palate is phenomenal; it's deep and has grip and is mineral and intense with energy, direct and not shy. Superb. 1,537 bottles were filled in February 2022. This has a strong personality and feels very complete.HK$3,720.00 -

Hailing from complex soils defined by a mixture of iron, quartz, sand and silt, the 2022 Trane is the most aromatically spectacular wine in the Parra lineup, opening with an alluring, complex perfume of licorice, orange peels, roses and dark fruits. Similarly, the palate is the most sumptuous and concentrated, ratcheting up the density and saturation while sacrificing none of the silky precision that defines the house style. This power is echoed on the finish with an expansive, sweet intensity that swells in lockstep with a simmering mineral undercurrent, concluding with a retronasal perfume first observed on the nose. This is certainly the flashiest, most seductive wine in the stable, and I suspect it will evolve beautifully in the cellar.HK$2,525.00 -

There is a lot of finesse in the 2020 Pegaso Barrancos de Pizarra, with a fine texture and almost powdery, elegant tannins, and it transmits a sensation of harmony. It's perfumed and floral and has more red than black fruit. It's medium to full-bodied, precise, clean, tasty and long. It's ripe, but the alcohol (15%) is completely unnoticeable. In fact, it feels less ripe than the Granito from 2020 that I tasted next to it. 4,104 bottles produced. It was bottled in May 2022.HK$1,835.00 -

For the fourth time, the Chateauneuf du Pape Cuvee da Capo has been produced, and for the fourth time, it has received a perfect score although I might back off the 2000's perfect score based on the fact that it seems to be more of an upper-ninety point wine than pure perfection these days. The 2003 Chateauneuf du Pape Cuvee da Capo has distanced itself ever so slightly from the 2003 Cuvee Reservee. Before bottling and immediately after bottling, these two wines’ differences were not as evident. At present the Capo reveals that extra level of flavor, power, complexity and richness. It is a big wine (16.1% alcohol – less than in the 1998, but more than in the 2000 and 2007) boasting a dark plum/garnet color as well as a stunning bouquet of aged beef intermixed with pepper, herbes de Provence, and steak au poivre. This unctuously textured, full-bodied Chateauneuf possesses enormous body, huge flavors and sweet, velvety tannins. Still youthful, it has not yet begun to close down, and I’m not sure it ever will given this unusual vintage. It is a modern day classic that should continue to provide provocative as well as compelling drinking for 20-30+ years.HK$21,235.00 -

While a full-bodied, incredibly concentrated, rich and unctuous wine, it carries its wealth of fruit and mid-palate density with incredible elegance and purity, with a seamless texture, no hard edges and a finish that won't quit. The 2007 is more elegant and seamless than both the 1998 and 2003, with an incredible sweetness of tannin. Off the charts in the right ways! This was stunning from start to finish. The perfume explodes with scents of incredibly ripe cherries, plums, black raspberries, thyme, wet earth, garrigue and smoke. And that's just the appetizer. The main course is where the real action is, with its mouth filling, teeth staining levels of fruit, extract, the fruit is perfectly ripe, the levels of concentration are insane, yet everything is in balance. Nothing is too much. If you have the money want Chateauneuf du Pape at its best, this is worth cellaring a bottle of two.HK$20,875.00 -

Compared to the 2010 by Laurence, it offers a stacked, full-bodied, incredibly concentrated feel as well as a blockbuster bouquet of blackcurrants, tapenade, cured meats, garrigue, and assorted Provençal street market-like aromas and flavors. It doesn’t have the sheer volume or flamboyant character of the 2016 (which I think is a better wine) but is deep, straight, and as classic as it gets.
