Yet another nose with standout freshness, even delicacy, but still quite youthful, mingling black fruit, spices, and spring flowers. A bit massive and still tightly wound on the palate, the wine has impressive tannic density and power but also finesse, apparent in the airborne, minty finish. The concentration and largesse of the 2016 Pichon Baron is apparent from the get-go with incredibly alluring, ripe and expansive fruit aromas in the blackberry, dark-cherry, mulberry and plum zone. Espresso and cedar, as well as a slate-like, stony mineral edge add complexity. The palate has incredible depth, drive and detail. Fine and plush tannins stretch the palate in every direction. So fresh and vivacious, this is the greatest Pichon Baron since 1989 and has a long future. Try from 2024.HK$7,260.00 -

Dark and brooding in bearing, the 2021 Pichon Baron is a somber, mysterious wine. It is every bit as impressive as it was en primeur. Graphite, leather, spice, mocha and dried herbs meld together in a wine of power, precision and contemporary classicism. It's one of my early favorites in this vintage. I won't be too surprised if it turns out even better than this note suggests.HK$5,000.00 -

The 2015 Pichon Comtesse is a towering wine, as it has always been. Rich, sumptuous and totally hedonistic, the 2015 melds together intense fruit with structure. Far from an easygoing wine, the 2015 is going to need a number of years and will then drink well for several decades. Grilled herbs, smoke, new leather and licorice are some of the many notes that are layered into the dark-fleshed fruit for complexity. As good as the 2015 is today, it also has room to grow. Technical Director Nicolas Glumineau has done a tremendous job with the 2015s at Pichon Comtesse. The blend is 68% Cabernet Sauvignon, 29% Merlot, 2% Cabernet Franc and 1% Petit Verdot, aged 18 months in oak, 55% new.HK$19,500.00 -

With a remarkable depth of color, the wine opens from the glass with touches of espresso, smoke, tobacco, flowers, spice and an array of red and black fruits. Full-bodied, richly textured, opulent, velvety and silken, the wine is off the charts with its decadent sex-appeal. This is a modern day version of the legendary 1982 that will easily age for 3-4 decades without fear. Give it at least 10 years in the cellar before pulling a cork. Entirely Chardonnay and coming from the villages of Cramant, Chouilly, and Cuis, the shimmering yellow-golden 2016 Champagne Special Club Grands Terroirs De Chardonnay Extra Brut is rounded and attractive with aromas of fresh baked croissant, honeyed green apple, and lemon bars. Approachable and medium-bodied, it fills the palate with an elegant mousse, a soft texture of citrus oil, and a clean, chalky finish. It’s already showing balanced layers and classic charm with a promising ability to enjoy over the coming 12 or more years. Disgorged April 2023, it has the addition of 4 grams per liter dosage.HK$4,300.00 -

From an enclave within the premier cru climat that lost the appellation when the former proprietor brought in topsoil from elsewhere, Girardin's 2017 Puligny-Montrachet Les Folatières is showing beautifully, wafting from the glass with notes of citrus oil, mandarin, pastry cream and toasted hazelnuts. Medium to full-bodied, satiny and enveloping, this is a concentrated, racy and penetrating Pulginy that is well worth seeking out. There's a single barrel of the 2016 Châteauneuf Du Pape Not For You, which is 100% Grenache from the Les Serres lieu-dit from the oldest vines of the estate. It wasn’t destemmed and spent two years in a neutral barrel. It offers an incredible bouquet of kirsch, blackberries, incense, white flowers, garrigue and spice that develops beautifully with time in the glass. Rich, powerful, full-bodied, and concentrated, it nevertheless glides over the palate with no weight, ultra-fine tannins, and a singular, exotic, lengthy style.HK$5,280.00 -

The 2020 Châteauneuf Du Pape Réserve Des Deux Freres is almost all Grenache but includes a tiny parcel of very old vine Serine Syrah from Charbonniere. This deep purple-hued effort boasts a killer nose of blackberries, cassis, spicy wood, graphite, and ground pepper, among other Provençal nuances. Pure, full-bodied, and flawlessly balanced, it has building yet perfectly ripe tannins, the vintage’s more elegant, streamlined style, and a great finish. It's beautifully done and will benefit from just a few years of bottle age and keep for 15 to 20 years.HK$2,049.00 -

Pale, bright yellow-green. More about fruit than the foregoing samples from Chassagne-Montrachet, offering aromas of lime zest, tangerine and orchard fruits, with a mineral element giving lift. Penetrating, linear and backward but not spiky on the palate, showing modest thickness but lovely inner-mouth lift to its dense, dusty citrus zest flavors. Doesn't show the texture of the examples from Chassagne but finishes with lovely rising white-peppery length.HK$20,175.00 -

Full lemon and light lime. Not so much nose but a classic pure St-Aubin white fruit in the mouth, a light grapefruit touch at the finish, fresh, with energy and persistence. Actually, very long indeed for this level. Tasted: October 2021HK$7,500.00 -

The 2016 Brunello di Montalcino is rich in aromatics of black raspberry, menthol, sage, and lavender. It is fruit forward upfront, with pure cherry fruit, balsamic, and black tea with classically structured tannins and acidity that lifts off the palate and a long finish. It was aged for 6 months in tonneaux followed by two years in large barrels. Cellar 2-4 years and enjoy 2024-2036.HK$2,980.00 -

Full golden-yellow colour; very toasty old-wine bouquet which gradually opened up and revealed more with time in the glass. Aromas of toasted bread, toffee, vanilla, apricot, blood orange, quince paste; the palate full, rich and very dry, the penetrating acidity powering a very long finish. A very mature Champagne, not for everyone, but for those who enjoy aged Champagne, it's a joy. The rating is purely about pleasure. Best in Show 70% Chardonnay, 30% Pinot Noir With fourteen years' ageing under its belt, this Champagne has had time to gather and marshal all its resources - which it does with great style and assurance. It's a pale, glowing lemon yellow, with a fine mousse and ample wealth of billowing vanilla, cream and plump hazels. The palate has dramatic intensity and drive, delivering a wealth of chalky lemon; its athleticism and vigour almost come as a surprise after that floating veil of seductive scent. A fresh, mouth-cleansing finish completes the appeal of this skilful, sagely judged blend from a hugely likeable vintage.HK$3,900.00 -

Great elegance and finesse already on the perfectly brilliant and aromatic nose shows Pol Roger's 2008 Blanc de Blancs Brut, displaying white and stewed apples with fine citrus flavors and discreet chalky aromas. The palate is dense and citric, as if limes and lemons are squeezed on a chalky rock. The purity, power and intensity is as remarkable, as is the finesse and persistence of the bubbles, the mousse on the palate and the long, persistent finish. Dosed with seven grams per liter, this extraordinary Blanc de Blanc Brut tastes drier than the Réserve Brut, but reveals a perfect ripeness of yellow fruits. The finish is lovely aromatic and intense, but also clear, fresh, firm and absolutely stimulating. This is a great Blanc de Blancs from the Grand Cru villages of Oiry, Chouilly, Cramant, Avize and Oger.HK$6,800.00 -

Made from 60% Pinot Noir and the rest Chardonnay, with 15% red wine from Les Riceys, the 2018 Champagne Vintage Brut Rosé pours a bright but deeper shade of pink with an orange hue and is forward with aromas of ripe raspberry, rose petal, orange peel, and a hint of spice. Medium to full-bodied, it has broad shoulders and a bit of tannic grip, with a fine mousse that fades to the background, allowing the wine's more serious side to show off its style. Chalky and powerful on the palate, with wonderful clarity and a long finish, it’s going to move into its more savory side with another couple of years in the cellar. It will pair well alongside roast duck and through the end of a meal. Drink 2025-2045.HK$4,965.00
