The 2016 Tenuta San Guido Sassicaia is another wine I love. It is an exceptional wine from one of the best vintages in Tuscany in the last decade. 2016 was a cooler and more classic vintage than 2015 and one can almost sense more freshness, comfort and ease for the vine in the natural harmony of this wine. The wine has vibrancy, a mouth-watering freshness and a beautiful natural grace. The nose is bright and clear with very precisely delineated aromas of wild flowers, meadow grass, violet, rose and cassis. The 2016 is looking stunning, with a wonderful texture and flow, yet a twist of nervosity and energy too. Drinking now but it needs maybe 5 years to begin to show its best.HK$20,100.00 -

Carlo Paoli, MD and head of winemaking, views 2019 as “one of the great vintages of the last decades. Although it was not generous in quantity (about 15% less than in 2016), for the quality of the grapes… it is to be considered exceptional.” The winemaking team are at their peak in terms of understanding and managing the vineyards and the more extreme vintage variations they face due to climate change. There were 280,000 bottles made this year but in response to climate change, Paoli plans to reduce the quantity. A very perfumed Sassicaia on the nose with forest floor, citrus and deep dark fruits. Blackcurrants. Cedar and black tea. Some balsamic. Pine needles. Full and very succulent. Really long, structured and complete. Tangy and energetic with a linear line of fresh tannins and acidity. Very Sassicaia throughout. 85% cabernet sauvignon and the rest is cabernet franc. This is a benchmark vintage, offering special appeal thanks to its profound sharpness and precision. The Tenuta San Guido 2021 Bolgheri Sassicaia remains fixed and immobile, like a time capsule of the vintage itself. One member of the winery team with whom I tasted used the word “granitic,” referring to its frozen, statue-like posture, a description I found especially fitting for the wine’s character. Whereas the 2016 vintage shows iron-like minerality, the 2021 reveals brilliant limestone clarity followed by dark currant, dried mint and blood orange. Cabernet Franc is reduced to 12% in this blend alongside Cabernet Sauvignon. The mouthfeel is complete and profound, defined by freshness and firm texture, and even when revisited nearly an hour later, this stone statue of a wine did not budge. The tannins are chewy but polished in texture. This is a Sassicaia that needs three or four years of bottle age to come together and soften. A structured wine for the cellar. Burghound (89-92)
An intricately layered nose freely offers up its combination of ripe white and yellow orchard fruit, especially peach, and less floral but spicier aromas. The rich, textured and vibrant flavors possess very fine mid-palate density that brims with dry extract on the sappy finish that is supported by lemon-tinged acidity. The prodigious 2013 Cabernet Sauvignon Estate is 100% Cabernet Sauvignon, including fruit from some of the oldest Cabernet vines still in existence in Napa. This full-bodied classic displays notes of forest floor, earth, crème de cassis, blackberry liqueur, licorice and some pen ink. It is dense, full-bodied, prodigiously rich, massive in intensity, yet relatively light on its feet. This great ballerina of a wine has extraordinary ripeness but pulls back from the edge before going over the top. Pure perfection from Napa Valley, the 2019 Cabernet Sauvignon is, as always, all Cabernet Sauvignon from an incredible site in Rutherford that spent 21 months in 70% new French oak. Incredible aromatics of crème de cassis, darker currants, smoke, tobacco, and assorted floral notes all define the bulk of the bouquet, and it’s full-bodied, with a multi-dimensional, layered texture, ultra-fine tannins, and perfect balance. This is such a magical site, and this wine consistently checks in with the greatest wines of the world. It already offers pleasure yet should have 30 years of overall longevity. Moving to the Grand Vin 2021 Cabernet Sauvignon, red wine simply doesn't get any better, and I never cease to be amazed at what winemaker Celia Welch accomplishes with this incredible terroir. Deep ruby/plum-hued, with a kaleidoscope-like array of cr me de cassis, jammy blackberries, spicy oak, graphite, and smoked tobacco, with a kiss of background chocolaty nuances, it hits the palate with full-bodied richness, a multi-dimensional, layered mouthfeel, ultra-fine tannins, and a flawlessly layered, concentrated, balanced profile that has to be tasted to be believed. Given its wealth of fruit and texture, as well as purity and balance, it already offers pleasure, yet smart money will give bottles 4-6 years in the cellar, count themselves lucky, and enjoy bottles over the following two decades.HK$21,745.00 -

The lime and oolong-tea freshness effortlessly swallows up the unfermented grape sweetness, as if it didn’t really exist. Medium to deep garnet-purple colored, the 2018 Screaming Eagle soars out of the glass with vibrant notions of ripe blackberries, black cherries and fresh red and black currants plus wafts of licorice, candied violets, cedar chest and clove oil with a beguiling touch of sea spray. Medium-bodied with jaw-dropping elegance, the palate is finely textured and yet built like a brick house with a super taut backbone and exquisitely knit acidity. The intense black and red fruit flavors are accented by layers of mineral and floral notions, finishing with incredible length and depth. Undeniably stunning. “I loved it!” winemaker Nick Gislason told me when I asked him for his thoughts on the 2018 vintage. “Everything is just really perfumey with a lot of verve and a lot of freshness. It’s a wholesome vintage, if that makes sense? The canopies were big and healthy; there was a lot of life in the vineyard. After 2017, it felt like the bloom that comes afterward.” He went on to say, "We made a little 2017 red. Only four barrels of the Cab! Ten barrels of The Flight. Only from grapes that came in before the fires—mainly Merlot and a couple of blocks of Cabernet." Whereas Screaming Eagle is mainly sourced from Cabernet Sauvignon grown on the western side of the estate, there is one plot of old Merlot (1980s plantings) on the eastern side of the vineyard that continually makes the backbone of this Second Flight/The Flight. This is planted on very gravelly, well-drained soils. Gislason explained, “The Cabernet Sauvignon for The Flight is always about being fresh, light and perfumey, without the firmer tannins that Cabernet can sometimes give. There is a ‘fresh’ end of the property that this tends to come from. There is some other Merlot on the other side of the property that doesn’t have the acidity, perfume or brightness we’re looking for. We don’t use this in The Flight.”HK$103,515.00 -

Predominantly vinified in classic foudres, the 2021 Graacher Domprobst Spätlese is clear, deep, coolish and flinty on the nose, yet it's provided with a fully ripe and aromatic nose of yellow-fleshed stone fruits intertwined with notes of crushed, wet slate. Lush and elegant on the palate, this is a linear, saline and tensioned Spätlese with slate/tannin grip and the aromas of fully ripe and juicy red-skinned apples and lemons. 8.5% stated alcohol. From 80- to 100-year-old vines, the 2021 Zeltinger Sonnenuhr Auslese Rotlay is deep, pure and flinty on the aromatic and rather coolish, elegant nose that shows ripe white peach aromas intertwined with spicy notes of crushed blue slate. Full-bodied, pure and saline on the palate, this is a rich yet crystalline and piquant rather than textured Riesling with fine tannins and still some yeasty layers and a certain grapefruit bitterness on the finish. Superb aromas of black currants, rose petal and mint. Lavender and stones too. Full body with incredible fruit density. Complex, yet it's agile and bright. Tannins are perfectly polished. It builds on the palate and shows the structure of a first growth Bordeaux but remains so Chilean. A blend of 58% cabernet sauvignon, 15% carmenere, 12% malbec, 10% merlot, and 5% petit verdot.
