William's father planted these vines in 1947, 1948, 1950 and 1952. All are in the upper part of Les Clos. Their positioning simultaneously offers freshness and power. Yellow cherries, yellow tomatoes and summer herbs deliver a bold palate. It's a tsunami of flavor, and the structure is equally dominating. Old-school Coonawarra wrapped within a sheath of contemporary tannin management. Smoother, perhaps, but the region's green olive scented tannins, sinewy and edgy, are strongly genetic. Finishes chalky firm with a long inky/ graphite plume. Made for the long haul. Powerfully expressive yet unforced wine with superb vinosity, richness, density and volume. Superb. Give this 5 or 10 minutes to open in the glass because it has a pretty serious structure, deftly weighted, full of white pear, quince and apricot pit, balanced by savoury rosemary, straw and fennel notes, successful and totally moreish. Opening with a gorgeous, white blossom-laced perfume, the 2012 Carrodus Viognier is scented of peach blossoms, frangipani and spiced pears with suggestions of baker's year and acacia honey. This is a huge and impressive wine, but somehow graceful and subtle. It packs an eclectic array of brambleberry compote, violet essence, eucalyptus, oyster shell, pure iodine, vanilla, resin, tar, cassis, plum liqueur and hot stones. You can only stand back in awe as one shade of fruit appears after the next and a barrage of tannin coats your mouth. Yet, this is gentle, agile and flowing. Nevertheless, its main attraction remains its unashamed, monumental power and muscularity. A haunting wine that sends chills down your spine. An epoch-defining wine for Veneto that harks back to the legends of the ‘50s and ‘60s. Perhaps the best Amarone ever made. Impossible to resist now, but better in 2022.HK$7,700.00 -

The 2019 Fósil San Pablo is a Chardonnay from San Pablo that follows the steps of the 2018, with its moderate alcohol and notable acidity and freshness. It comes from grapes planted at 1,400 meters above sea level in the coolest place possible. It's citrusy and has notes of aromatic herbs with restraint. On the palate, it's vibrant and very dry, with marked chalkiness. It's more about the place than the grape. 4,300 bottles produced. It was bottled in December 2019.HK$2,490.00
