The 2012 Vosne-Romanée Les Rouge du Dessus is arguably the hidden jewel in Cecile Tremblay's lineup. Layers of deeply spiced dark fruit jump from the glass in a wine of extraordinary purity. The brush strokes are broad in a wine with massive tannins and equally rich fruit. All the 2012 needs is time. Today it is embryonic, but dazzling all the same. Bright red-ruby. Very pure, perfumed aromas and flavors of blackberry, boysenberry, minerals, violet and cocoa powder. Sappy and tightly wound, conveying a powerful impression of vinosity thanks to its pungent minerality. The pH here of 3. 45 is the lowest in the cellar in 2014. Indeed, this wine shows a distinctly cool quality in the context of the vintage, and finishes with excellent chewy length. Tremblay told me that the 2008 version of this wine was paired by a chef with a tuna dish during a trip to Tokyo and that the combination was perfect.HK$41,930.00 -

The 2016 Vosne-Romanée Les Rouges du Dessus 1er Cru has a clean and fresh bouquet with perfumed Morello and strawberry shortcake aromas, all well defined. Exuberant is the word that comes to mind. The palate is medium-bodied with supple tannins that frame a sweet, confit-like core of red fruit with hints of marmalade and blood orange towards the seductive finish. The 2017 Vosne-Romanée Les Rouges du Dessus 1er Cru is showing some oak on the nose, although there is sufficient fruit to support that. This seems to gain purity and delineation in the glass. The well-balanced palate is fleshy, ripe, and quite sweet and tart, with red cherries, blood orange and a citrus element on the silky-smooth finish. Good dark red. Reticent aromas of black cherry, violet and minerals, complicated by a hint of bitter chocolate. Juicy and tightly wound; not a sweet or generous style but reveals lovely salinity and subtle dark fruit intensity with aeration. This youthfully reserved village wine is solidly structured but not hard, finishing with firm but even tannins. Ultimately a bit more generous than the Morey-Saint-Denis Très Girard, with the tannins more enrobed by fruit and mineral extract. The NV (2018) Blanc de Noirs Val Vilaine is bright, fresh and wonderfully nuanced. Orchard fruit, citrus and floral notes give the Val Vilaine so much energy. Cédric Bouchard coaxes so much nuance from these 40 year-old vines. The Val Vilaine is always the youngest wine in the range - the current release is the 2018, which spent just 15 months on its lees - but it will give readers who aren't familiar with these wines a very good idea of the house style. Cédric Bouchard's NV Blanc de Noirs Côte de Val Vilaine (2019) is beautiful, wafting from the glass with aromas of pear, green apple, clear honey, fresh bread, almond paste, white flowers and mirabelle plum. Medium to full-bodied, layered and vinous, it's satiny and textural, with an enveloping core of fruit, superb concentration and incisive acids. Chiseled and penetrating, it concludes with a long, saline finish. If the 2018 was immediate and demonstrative, this has structure to burn with age, charming though it is out of the gates, and I'm inclined to nominate it Bouchard's finest Val Vilaine to date.HK$1,600.00
