Gosset's 2004 Extra Brut Celebris is a powerful, bracing wine. Pinot Noir-infused red stone fruits, dried leaves, mint, herbs and spice notes, along with the low dosage, give the wine its distinctive combination of power, breadth and raciness. The 2004 needs a bit of time for the bouquet to open up, but when they do, the wine is quite expressive. Now 12 years after the vintage, the 2004 Celebris offers a good bit of aromatic and flavor intensity, with the slightly mature notes that are typical for a wine of this age. Chamomile, honey and lightly roasted almond are some of the nuances that linger through to the creamy, expansive finish. Dressed in a unique color that I would describe as a salmon pink with orange (or onion) reflections, Gosset's NV Grand Rosé Brut – a blend of 58% Chardonnay and 42% Pinot Noir, 8% red wine inclusive) – opens with a highly delicate and matured, vinous bouquet of red fruits. Pure, light, highly elegant, round and intense on the fruity-mineral palate, this is a picture-book Champagne of great finesse and delicacy. The persistent finish is lovely, pure and extremely stimulating in its salty/mineral freshness; whereas the fruit is articulated in an aristocratic reticence and perfectly integrated into the noble, overall expression. As to the red, the 2016 Vaucluse reminded me of the 2007 with its incredible opulence, sweetness of fruit, and flamboyant style. Awesome black raspberry and strawberry fruit characteristics all intermix with notes of incense, white and black pepper, fruit cake, plums, garrigue, and Asian spices on the nose. Full-bodied, deep, and concentrated on the palate, it doesn’t pull any punches and the sweet fruit scale (I wouldn’t be surprised if there was a kiss of residual sugar here), yet has beautiful purity, no hard edges, and a fabulous, clean, dry finish. It took plenty of air to show at its best and will benefit from just short-term cellaring. It’s one of the sexiest wines in the vintage and will keep for a decade.HK$2,830.00 -

The dense, rich 2000 reveals notes of a spring flower garden intermixed with smoky barbecue meat, blackberries, black currants, and crushed rocks. The extraordinary perfume is followed by a wine of great depth and richness, full-bodied power, and not a hard edge to be found.
