A focused, sharp line of citrus flavours and aromas is driven by clean, crisp acidity, with tightly wound lemon and sharp green apple notes propelled by measured power. The Chardonnay I10V1 vine clones from this steep, 280m-high site demand different treatment – no malolactic fermentation, no battonage of lees during fermentation in mostly older French oak barrels, then nine months’ maturation. This is just enough to add a savory rim and a hint of roasted hazelnut to the smooth palate line, without intruding on a clean, crisp finish. It’s clean, confident and assured.HK$2,320.00 -

Pinot Noir of the Year. Named after the Applejack eucalypts that surround the vineyard, which was planted at Gladysdale in 1997 by Ray Guerin. Seven clones comprising 114, 115, MV6, D2V5, D5V15, Pommard and Abel. Whole bunches (40%) and 20–25% new French barriques. 2022 was a hard act to follow, but this superb wine gives it a shake. Exotic, aromatic and pure with its bouquet of wild strawberries, dark cherries, quince, spices and flowers. Densely packed, this saturates the palate, but, as always, it's light on its feet at the same time. Seamless tannins round out another benchmark for what's already a benchmark wine.HK$2,535.00 -

The 2023 Tarraford Vineyard Chardonnay is spicy and restrained on the nose; where the Applejack Chardonnay is exuberant, powerful and concentrated, this is blessed with more subtlety and perhaps even complexity. Aromas include tarragon and star anise, cinnamon and freshly grated nutmeg (in the way that nutmeg can be fresh, rich, slightly medicinal/green, resinous, spicy, warm, round/sweet, generous/enveloping). The fruit speaks of white peach, green almond, salted cashews and finely ground white pepper. The acidity is bright and saline within. 13.5% alcohol, sealed under screw cap.HK$4,565.00 -

At 420m Wombat Creek is the highest vineyard site in the Yarra Valley, with a gentle northeast-facing slope of volcanic red soil. The vinification sees the wine bottled by gravity, not fined and only coarse-filtered, as is the case with its siblings. Although the acidity is not adjusted (like its siblings), it feels softer and fruitier, pink grapefruit at work.HK$2,145.00 -
James Suckling (97)
There’s striking freshness of lemon and yellow grapefruit here with a chalky, stony, flinty edge. The fresh fruit carries subtly spicy oak nicely. There are grapefruit and fresh yellow-peach flavors in abundance. This carries energetic, acidity-fueled drive and delivers impressive balance, as well as length. So long and juicy. Drink or hold.HK$1,900.00 -

100% destemmed and fermented with as many whole berries as possible. Left to soak for four days, pre-fermentation with one pump over per day, then plunged three times per day. 15 months in French barriques (25% new). A bright crimson red. Perfumed and seductive even at this early stage. Aromas of wild red berries, gentle spice, dark rose and bracken. Concentrated and structured with very fine, sinewy and savoury tannins. A brilliant, non-mainstream Yarra Valley pinot that's been built to go the distance.HK$4,290.00 -

Wine Advocate (97+)
I saw this wine blind recently (in a largely international tasting) and could not place the variety or region. I can see why here today: the fruit in the 2017 Quintet is almost unbelievably red fruited. It is buoyant and supple and speaks eloquently of raspberry seed, black cherry, red apple skins, blond tobacco, hints of sweet roasted meats (distant wafts only), enoki mushroom and red miso; the experience is inchoate and thrilling in equal measure. In isolation, perhaps, it may be easy to assume that the wine, given its age versus purity quotient, is simple. But given what we know about the capacity for aging carried by this vineyard/cuvée, I'd say you were grievously mistaken to judge it in that manner. This is a sleeper wine and one that hasn't even started to show us what it is capable of. It's a superstar. 13% alcohol, sealed under natural cork.HK$4,595.00 -

Stands proudly at the head of the Mount Mary portfolio. A blend of 44% cabernet sauvignon, 30% merlot, 16% cabernet franc and 5% each of malbec and petit verdot, each variety handled according to its structure. Open/static fermenters, wood/stainless steel, 10-14 days on skins, 35% new oak from a range of coopers and forests, 16-20 months in barrel. Mesmerisingly silky, with a kaleidoscope of fruit and secondary flavours.HK$4,535.00 -

Sourced from McLaren Vale (41%), Coonawarra, Barossa Valley and Padthaway this vintage, the 2019 Cabernet Sauvignon Bin 707 spent 18 months in 100% new American oak hogsheads prior to bottling. Scents of vanilla, cedar and celery seed seamlessly swirl around dark notions of cassis, plum, coffee and cocoa. There's a touch of mint, but it fits well within the context of the wine. Full-bodied, concentrated and rich, this wine looks to have at least two decades ahead of it. The finish is truly special, with beguiling hints of maple syrup balanced by a smooth, enveloping wash of softly dusty tannins.HK$12,960.00 -

One of the most daring releases of recent times, not so much for its blend of shiraz, pinot noir and sauvignon blanc as its bold shot at 100% whole bunch fermentation in the cold, wet '11, from a vineyard so run down it almost didn't crop at all. Bill Downie has worked his magic to create a hauntingly ethereal wine of internal harmony, silky structure and captivating exoticism.HK$650.00 -
James Suckling (99)
This is a wine we have not yet seen from Tolpuddle. It has such well-curated complexity and whole-bunch influence (40%) sits in the sweet spot. It is concentrated, yet so elegant and the vivid freshness that pervades every aspect of the nose and palate is striking. Aromas of red fruit, such as raspberry, strawberry, red cherry and red plum are framed in spice and fragrance. The palate has such impressive definition and clarity and the tannins are so detailed, fine and clear-cut. Concentrated red and darker cherries are fleshy, yet elegantly focused, and the acidity laces it all up so clearly. So drinkable now and for a decade at least. Screw cap.HK$5,180.00
