At this point of youthfulness the pink colour is rather rich and bright. Lovely clean and fruit-forward nose with fresh red berry aromas mixing with spice and orange notes. Quite shyly evolved with much more to surface on the complexity front. Today there is attractive exuberant fruitiness and perfect creamy freshness. Base wine, the same as the white Grande Année 2015 tinted by 5% still red wine from the famous Côte aux Enfants vineyard, was all aged in oak. Blend of 11 crus, predominantly 62% Pinot Noir from Verzenay, Aÿ and Mareuil-sur-Aÿ and 38% Chardonnay from Chouilly and Avize. Disgorged July 2023. Pale, slightly gris salmon pink (a little paler than the Billecart 2012 Elisabeth Salmon rosé tasted alongside). Heady, mushroomy, off-dry, sumptuous Bollinger gloriousness on the palate. I wonder what the dosage is, and whether the richness comes mainly from the fruit and oak? Finishes dry, but with wonderfully soothing impact on the palate. Relatively gentle mousse. The benchmark cuvée from the exceptionally talented Reenen Borman, at the helm of this mythical estate since 2010 - this wine is spoken about in hushed tones amongst experts, critics.
50% whole-bunch fermentation has given the wine monolithic structure, without a single brick out of place. 25% of the wine was raised in 400 litre oak barrels, imparting gentle seasoning and further fine tannins, whilst the remaining 75% was raised in concrete eggs, preserving the fruit's sensational freshness and impossible purity.
Naturally, this wine is infantile due to its quality and structure, but already it displays a mesmeric mélange of violets, dried flowers, herbs and spices on the nose. Positively quivering with energy at this stage, the wine’s acidity shoots like Artemis’ arrow across the palate, losing no momentum through the endless finish. It is hard to overstate the juddering quality of Epilogue – Tim Atkin MW said of the 2017 that it was “now established as one of the Cape’s great Syrahs”... Nicolas Audebert and his team have done it again. The 2017 Canon is shaping up to be one of the wines of the vintage. Rich and vertical in construction, the 2017 possesses off-the-charts richness and intensity in all of its dimensions. In the glass, the 2017 is sumptuous and layered, with superb detail and tons of sheer pedigree. In 20 years, readers will have a fabulous time tasting the 2015, 2016, 2017 and 2018 together and debating their respective merits. Dark plum fruit, striking Franc aromatics and the clean, focused energy of Saint-Émilion's limestone plateau make for a ravishing, exquisite wine of the highest level. On the palate, the wine is opulent, powerful, rich, and intense, yet, it is also light on its feet due to its complementing acidities. The finish is long, intense, energetic, and rich, with layers of sweet, polished, luscious fruits, with just a hint of spice, and peppery cocoa on the back end. The wine is a blend of 71.5% Cabernet Sauvignon, 27% Merlot, and 1.5% Petit Verdot. 13.6% ABV, 3.64 pH. The Grand Vin was produced using only 52% of the harvest. From the team at Calon Ségur, the 2018 Château Capbern is another smoking good Saint-Estèphe. In 2018 it’s a blend of 62% Cabernet Sauvignon, 37% Merlot, and the rest Petit Verdot that will spend 18 months in 60% new French oak. This ripe, sexy wine (it hit 14.6% natural alcohol) sports a deep purple color as well as blockbuster notes of crème de cassis, jammy blackberries, crushed flowers, and scorched earth. Despite all the fruit and texture, it stays beautifully balanced, has classic Saint-Estèphe earthy minerality, ripe tannins, and a great finish.HK$1,240.00 -

North part of Chassagne, they have 2 hectares. Rocky soil with lots of limestone. Linear, bright and mineral with a citrus fruit core and a bit of spicy oak. Based all on Grenache from a single lieu-dit in the southwest of the appellation called the Barbe d'Asne and brought up in concrete tanks, it offers up a gorgeous nose of kirsch liqueur, ground pepper, garrigue, and graphite. Deep, rich, and powerful on the palate, with tons of sweet fruit, it needs 4-5 years of bottle age and will keep for two decades or more.HK$2,975.00 -

The formerly little-known appellation of Cabardès made it into our Decanter World Wine Awards 'Best in Show' selection in London in spring 2018, and now the AOP has done it again, with yet another outstanding effort, this time impressing our Asian judges. This blend of 60% Cabernet Franc with 30% Syrah and 10% Grenache is saturatedly black-red in colour, surrendering fresh, floral aromas backed by enticing black-raspberry and mulberry fruits. On the palate, the wine is deep yet full of lively charm, perfectly summarising the 'crossover' appeal of this appellation, which lies half-way between the Atlantic and the Mediterranean. Fine-grained tannins and lacy, billowing acidity carry that raspberry/mulberry fruit all the way to a fresh, graceful finish. Cabernet Franc fans should seek it out. Drink 2018-2026HK$1,720.00 -

The Grand Vin 2020 Château Cheval Blanc checks in as a blend of 65% Merlot, 30% Cabernet Franc, and 5% Cabernet Sauvignon that was raised, as always, in 100% new French oak. As usual with Cheval Blanc, it's primarily about finesse and elegance, as well as complexity, and exhibits a deep purple hue as well as a kaleidoscopic bouquet of sweet red and black fruits, spring flowers, spicy incense, loamy earth, and smoke tobacco. Absolutely flawless on the palate, it's full-bodied, has perfectly integrated oak, ripe, silky tannins, and a gorgeous finish that keeps you coming back to the glass. This powerful, concentrated Cheval Blanc offers pleasure even today (needs lots of air) but warrants 7-8 years of bottle age and will see its 40th birthday in fine form.HK$22,085.00
