Seductive and well-judged ‘reductive’ (smoky, struck-match) aroma and really toasty as it opens up, something cedary. Very Coche Dury but, most importantly, there is the fruit intensity to carry off this winemaking style. Nutty, creamy, mealy citrus. So many things going on that it makes you slow down to try to enjoy all this complexity. Deep, deliciously fresh and incredibly persistent with an aftertaste of savoury/mineral citrus. Boekenhoutskloof has always made impressive, age-worthy Semillons, but Gottfried Mocke has taken the 2020 to another level of complexity. Using grapes from three old parcels, planted in 1902, 1936 and 1942, with the largest component from the legendary La Colline vineyard, this includes 2% Muscat d'Alexandrie and some field blended Semillon Gris. Fermented in two thirds new wood, with the rest seeing concrete eggs and amphoras, it's one of the greatest ever Cape whites. Stony, flinty and layered, with wax, lemongrass and nutmeg flavours and subtle struck match reduction. Wow!HK$2,080.00 -

Cédric Bouchard's NV Blanc de Noirs Côte de Val Vilaine (2019) is beautiful, wafting from the glass with aromas of pear, green apple, clear honey, fresh bread, almond paste, white flowers and mirabelle plum. Medium to full-bodied, layered and vinous, it's satiny and textural, with an enveloping core of fruit, superb concentration and incisive acids. Chiseled and penetrating, it concludes with a long, saline finish. If the 2018 was immediate and demonstrative, this has structure to burn with age, charming though it is out of the gates, and I'm inclined to nominate it Bouchard's finest Val Vilaine to date.HK$8,500.00 -

What a magnificent bouquet for this Dom Pérignon 2012! Pastry, a hint of smoke and autolytic notes provide a compelling counterpart to eager yet elegant aromas of citrus (lime, tangerine and kumquat) joined by those of fresh fruit, herbs, liquorice, and menthol. There is even a refreshing note of ivy. The palate is tense, vibrant, and very fresh despite its impressive density, which meets its match with an unending finish. This isn’t strictly speaking a domaine wine from Joseph Drouhin, but the contract with the Marquis de Laguiche is so long that it might as well be. Showing impressive concentration, yeasty, textured weight, delightful 25% new wood and notes of beeswax and lanolin, it finishes with freshness, minerality, commendable poise and some skin-tannin grip.HK$6,960.00 -

The 2012 Cristal is the first made entirely from biodynamically farmed vineyards. Passionfruit, mango, spice and ginger open first, but it is the wine’s textural richness and volume that stand out most. The 2012 is one of the most opulent, flamboyant recent Cristals. Those qualities feel especially amplified in this tasting, perhaps because of the presence of wines from the surrounding vintages. It was a complicated season, as mildew reduced yields significantly, resulting in an especially rich Cristal that seems to be gaining intensity with time in bottle. Dosage is 7 grams per liter. Sourced from 39 plots, the 2014 Champagne Cristal is 60% Pinot Noir and the remainder Chardonnay, with 32% aged in oak, and it has 7 grams per liter dosage. It is highly expressive of classic elegance and purity, revealing aromas of crushed rock, almond croissant, and perfume of citrus blossoms. The palate is hyper-refined in its mousse, with pinpoint bubbles, a subtly rounded mid-palate, an irresistible chalky texture, and energy throughout its long and floral finish. The extremely young and undeveloped 2012 Mas del Serral was produced with a field blend of Xarel.lo and Bastard Negre (Graciano) from the oldest vineyard on the family property (planted between 1950 and 1954). The wine has 12.5% alcohol and very low pH (2.96) and is incredibly subtle and delicate with inner strength and energy. It has incipient notes of fennel and aniseed, energetic and very much alive but in need of more time to unfurl more layers of aromas and gain weight in bottle. 2012 was a dry year, and the wine has a dry and stony palate. It also has high acidity through concentration of the juice and is mineral and austere, with no heat or fat. 2,440 bottles produced. This ages in bottle for at least 100 months.HK$1,270.00 -

Terrific structure and energy on the driving palate, but all of this is wrapped in rich citrus fruit to create stunningly complete harmony. The 2015 Champagne Les Chetillons Brut is delicate but expressive, with white flowers and a hint of confectionary sponge cake aromas. It is a pale straw with a shimmering green hue. Coming off the heels of the 2014 vintage, this is comparatively much more generous and open and is a pleasure to drink now. It has its hallmark stamp of Chetillon despite the warmth of the vintage and is not overblown. Drink 2023-2043.HK$17,030.00 -

The 2022 Cuvée Aux Antipodes Blanc is a magnificent triumph of yields. Where previously this 1.8-hectare plot produced anywhere from six to eight barrels of wine, the 2022 produced 23 barrels of wine—very exciting for followers of this cuvée. On the nose, the wine is showing its youth, but far from being inchoate, it is long and polished through the very long finish. It's got lashings of stone fruit and preserved citrus, white pepper, star anise, shaved fennel, juniper and cold buttered toast. This is a wonderful wine of potential and kaleidoscopic complexity, although it is far tighter and more compact than previous years. Searingly good. Winemaker Brian Croser is pretty excited about this wine, and a quick sniff and extended sip, and I think I know why. Like the rest of Australia, it was a very small crop resulting in a wine of deep fruit concentration. Once again, the wine spent an extended time until February this year on full lees, allowing pick up of further complexity and textural mouth feel. The striking feature is the palate power and length. I have tasted many of these wines but I don’t think I have tasted better.HK$2,265.00 -

Owned since 2011 by Michael Hill Smith MW and Martin Shaw of Shaw & Smith Wines in the Adelaide Hills, the 20ha northeast facing Tolpuddle vineyard occupies a prime position in Tasmania’s Coal River Valley. The pair saw the vineyard’s potential immediately, and have been producing exceptional single-vineyard Chardonnay and Pinot Noir ever since. There was a particularly wet start to 2021 – one of the coolest on record – resulting in much smaller but more concentrated grapes. Harvested by hand, the grapes are whole-bunch pressed then aged in French oak for nine months. Vincenzo Arnese: The nose is fresh and ripe with incredible structure, showing quince, candied lemon peel, grapefruit juice and subtle oak. A lingering acidity completes the frame of this outstanding wine. Pedro Ballesteros Torres MW: A wonder of lightness and precision; a hedonistic mix of immediate restrained pleasure and long-term intellectual provocation. An amazingly subtle and complex finish. I adore this wine. Amanda Barnes: Aromas of gunflint, lavender, lemon peel and wet stones lead into a mouthfilling yet svelte wine with mouthwatering acidity and a long, savoury finish. The 2014 Brut Coeur de Cuvée impresses with its density and overall energy. Apricot, baked apple tart, spice, chamomile and lightly honeyed accents all meld together. The 2014 is deep and beautifully centered, with tons of poise and impeccable balance. It's a pretty big wine by Vilmart standards, and yet all the elements are so well put together. The blend is 80% Chardonnay and 20% Pinot Noir. Disgorged: March, 2021.HK$4,335.00
