Cédric Bouchard's NV Blanc de Noirs Côte de Val Vilaine (2019) is beautiful, wafting from the glass with aromas of pear, green apple, clear honey, fresh bread, almond paste, white flowers and mirabelle plum. Medium to full-bodied, layered and vinous, it's satiny and textural, with an enveloping core of fruit, superb concentration and incisive acids. Chiseled and penetrating, it concludes with a long, saline finish. If the 2018 was immediate and demonstrative, this has structure to burn with age, charming though it is out of the gates, and I'm inclined to nominate it Bouchard's finest Val Vilaine to date.HK$8,500.00 -

One of the great Blanc de Blancs Champagnes, this wine only hints of its age and maturity. Up front, the wine has layers of white fruits and a steely texture. What a magnificent bouquet for this Dom Pérignon 2012! Pastry, a hint of smoke and autolytic notes provide a compelling counterpart to eager yet elegant aromas of citrus (lime, tangerine and kumquat) joined by those of fresh fruit, herbs, liquorice, and menthol. There is even a refreshing note of ivy. The palate is tense, vibrant, and very fresh despite its impressive density, which meets its match with an unending finish. This 2012 incarnates the very essence of Dom Pérignon with such a concentrated degree of intensity, along with a capacity for ageing, that it is surely destined for a second life in a P2 edition.HK$8,165.00 -

The 2022 Chassagne-Montrachet Village is matured in 20% new oak. It has a generous bouquet with orchard fruit, touches of almond and patisserie. It will require a couple of years to absorb the oak. This isn’t strictly speaking a domaine wine from Joseph Drouhin, but the contract with the Marquis de Laguiche is so long that it might as well be. Showing impressive concentration, yeasty, textured weight, delightful 25% new wood and notes of beeswax and lanolin, it finishes with freshness, minerality, commendable poise and some skin-tannin grip.HK$6,960.00 -

Krug's 2004 Vintage is absolutely mesmerizing. Layers of bright, chiseled fruit open up effortlessly as the wine fleshes out with time in the glass. Persistent and beautifully focused, with a translucent sense of energy, the 2004 captures all the best qualities of the year. Moreover, the 2004 is clearly superior to the consistently underwhelming 2002 and the best Krug Vintage since 1996. This is really something. Electric on the palate. The aromas are so complex with sliced fresh and dried ginger, subtle pie crust, tarte tatin and hints of nutmeg with some salted caramel. Toasted bread, too. Always subtle. The palate is full- to medium-bodied yet hemmed-in with a freshness and balance that draws you back. Savory and vibrant. It's full of energy. Spectacular. Fascinating. Symphonic blend of 2012, 2008 and 2007. 65% of the 2012, 25% of the 2008 and 10% of the 2007. Eight grand cru. Chardonnay 58% and 42% pinot noir. Vinous - Antonio Galloni (98)
The 2012 Cristal is the first made entirely from biodynamically farmed vineyards. Passionfruit, mango, spice and ginger open first, but it is the wine’s textural richness and volume that stand out most. The 2012 is one of the most opulent, flamboyant recent Cristals. Those qualities feel especially amplified in this tasting, perhaps because of the presence of wines from the surrounding vintages. It was a complicated season, as mildew reduced yields significantly, resulting in an especially rich Cristal that seems to be gaining intensity with time in bottle. Dosage is 7 grams per liter. Sourced from 39 plots, the 2014 Champagne Cristal is 60% Pinot Noir and the remainder Chardonnay, with 32% aged in oak, and it has 7 grams per liter dosage. It is highly expressive of classic elegance and purity, revealing aromas of crushed rock, almond croissant, and perfume of citrus blossoms. The palate is hyper-refined in its mousse, with pinpoint bubbles, a subtly rounded mid-palate, an irresistible chalky texture, and energy throughout its long and floral finish. The 2015 Champagne Les Chetillons Brut is delicate but expressive, with white flowers and a hint of confectionary sponge cake aromas. It is a pale straw with a shimmering green hue. Coming off the heels of the 2014 vintage, this is comparatively much more generous and open and is a pleasure to drink now. It has its hallmark stamp of Chetillon despite the warmth of the vintage and is not overblown. Drink 2023-2043.HK$17,030.00 -

Luminous straw. Penetrating nuances of lime and guava join the lemon verbena, jasmine, mineral and white stone fruit aromas on the knockout, captivating nose. Then dense, complex and multilayered, offering profound flavors of fresh citrus fruit, sweet spices and talcum powder. Closes extremely long, clean and precise; this is a young white wine of utterly mesmerizing beauty. I find this to be one of the best young CSHs I have ever tasted; it is stylistically different but almost on the same quality level as the marvelous 2010 CSH. One sniff (never mind taste) and I was left almost speechless - and I’m not usually one who keeps his mouth shut when I recognize a truly great wine.HK$5,990.00 -

Clear pale colour, a refined and chiselled nose. A little quality oak now emerges to flesh out the bouquet. The fruit is very evenly distributed across the palate, still with an oak presence, a little sandalwood, a good mix between fruit and acidity, and a fine long finish. Drink from 2029-2036.
