Beautifully concentrated, this even has a bit of baby fat on it now. That's just fine as that provides a landing pad for the tangy tannins and racy acidity in this cuv e. The vines sit in iron-rich soils which give a slightly burly edge to the mouthfeel, despite the lush ripeness. For those preferring richer Pinot styles, this will show well now. The 2012 Cristal is the first made entirely from biodynamically farmed vineyards. Passionfruit, mango, spice and ginger open first, but it is the wine’s textural richness and volume that stand out most. The 2012 is one of the most opulent, flamboyant recent Cristals. Those qualities feel especially amplified in this tasting, perhaps because of the presence of wines from the surrounding vintages. It was a complicated season, as mildew reduced yields significantly, resulting in an especially rich Cristal that seems to be gaining intensity with time in bottle. Dosage is 7 grams per liter. The palate is hyper-refined in its mousse, with pinpoint bubbles, a subtly rounded mid-palate, an irresistible chalky texture, and energy throughout its long and floral finish. Tasted from magnum, the 2013 Cristal Rosé is ravishing. Dense, creamy and powerful, the 2013 captures all the qualities of the vintage, specifically the interplay of rich fruit from the warm summer and cooler inflections from a year that started late and ended late with a rare October harvest. Today, the 2013 is deep and beautifully seamless, but it is also young – far too young to be at its best. Dosage is 6.5 grams per liter, a bit less than for the standard bottlings, a decision taken to balance longer aging on the lees and a bit more residual sugar that is always left in the magnums after fermentation. Readers who can find the 2013 in magnum will experience one of the greatest thrills in wine.HK$10,100.00 -

Deep, full-bodied, and gorgeously concentrated, it has velvety tannins, a layered, mouthcoating texture, and a great finish. It's a baby, but wow, what a wine. Fashioned from remarkably low yields, this blend of 90% Merlot and 10% Cabernet Franc is a powerful, dense, tannic wine that will require considerable time to round into shape. It exhibits a dense purple color along with sweet aromas of mulberries, black currants, minerals, cold steel, graphite, and background spice. Full-bodied, highly-extracted, dense, and made in an unfashionably tannic, broodingly backward style, this is a wine for the ages. Relatively gentle wood is present on the markedly petrol and spice-infused aromas of honeysuckle, pear and white peach. There is impressive concentration to the succulent, round and seductively textured medium-bodied flavors that possess excellent complexity as well as an abundance of dry extract that imparts a sappy texture on the ever-so-mildly warm finish. I would note that 2015 is not an especially elegant vintage for the BBM but it is notably impressive all the same in the sense that it's more robust and powerful than usual. This could already be enjoyed but there is plenty of upside development potential, indeed this should age effortlessly for 20 years.HK$40,230.00 -

It was a dry vintage up to August, which turned exceptionally wet and cool. September saved the vintage with the ideal weather conditions - low rainfall and cool nights. The graceful nose opens to white flowers, ripe apricot and citrus hints. It is tense and refined, with a vivid mineral core balanced by pristine acidity and some toasted notes on the finish. It's not the most expressive today, but wait for it to awaken. This is built for cellaring.HK$8,305.00 -

A warm, sunny year produced this concentrated, elegant wine with refined aromas of ripe apple and quince, fresh hawthorn and a suggestion of mineral and toast. Supple and velvety in texture, it lacks nothing in substance or power to age for decades. The grapes are exclusively from vines in Avize, Le Mesnil, Oger, and Chouilly. Intensely perfumed, Pinot-inflected aromatics carry through the mid-palate and finish as the 2006 shows off its depth and pure energy. Veins of chalky minerality give the red berry and cranberry flavors an extra kick of energy. The 2006 is both powerful and delicate at the same, with crystalline precision and fabulous depth.
