I loved the 2020 No 9 from barrel and this beauty does not disappoint from bottle. Based on 89% Syrah, 9% Mourvèdre, and the rest Viognier that was only 50% destemmed, it spent 22 months in 65% new French oak. A wine that demands lots of air to show at its best, it reveals a deep plum/purple hue as well as a brilliant bouquet of red, blue, and black fruits, ground pepper, iodine, crushed violets, and wild sagebrush. With incredible purity and precision aromatically, it hits the palate with full-bodied richness, a deep, layered, concentrated mouthfeel, ripe tannins, and a great finish. It's a big, rich wine from Binns, but if anything, it shows another level of finesse and stays light on its feet and graceful. This world-class Syrah will benefit from 3-5 years of bottle age and evolve nicely over the following two decades. It's clearly one of the wines of the vintage in Santa Barbara, if not one of the greatest 2020s in the state.HK$14,500.00 -

Toasted hazelnuts and pecans on the nose, charry, buttery almonds, green apple so much aromatic complexity. Caramel, bitter lemon, orange, brioche/patisserie elements, like a buttery hot cross bun, some truffle too. Racy, piercing acidity hits the palate straight away along with such tiny, frothy bubbles that fill the mouth. The spine and tension is there, driving the wine forward with a clear vein of citrus acidity - a shot of lemon and lime, while still having the undercurrent of toasted, salty nuts. Nuanced and characterful with a hint of sweetness, sharpness and raciness all giving nuance and interest and building to an impressive whole. Well controlled with balance, construction and a gourmet feel. Made with Premier and Grand Cru grapes: Pinot Noir grapes from Mailly, Cumières, and Chigny-les-Roses, and Chardonnay grapes from Avize, Chouilly, and Vertus. Grapes are aged 12 years on their lees. Deep garnet-purple, it comes strutting out of the glass with flamboyant Black Forest cake, blueberry compote and plum pudding notions plus hints of spice cake, unsmoked cigars, menthol, licorice and dusty soil and accented by wafts of tar and black tea. The palate is full-bodied yet incredibly poised and vibrant with amazing freshness and very fine-grained, very firm tannins. Checking in as a blend of 93% Cabernet Sauvignon and the rest Petit Verdot and Cabernet Franc that hit 14.3% alcohol, the 2012 Dominus is a sensational wine that certainly ranks with the all-time greats of this cuvée and is reminiscent of the 1991. Ripe, flamboyant, and incredibly sexy, it nevertheless shows the classic style of this estate, has nothing out of place and just glides across the palate. Blackcurrants, tobacco leaf, cedar box, new leather, and an almost garrigue-like character all emerge from this full-bodied, silky, seamless effort that has fine tannin, perfectly integrated acidity, tannins, alcohol, and a great, great finish. Drink it any time over the coming 2-3 decades. It's a tour de force in Napa Valley Cabernet Sauvignon and one of the greats.HK$12,650.00 -

The 2017 Dominus is one of the truly epic, grand wines of the vintage. Rich, dense and explosive, with tremendous concentration and sheer power, the 2017 Dominus captures all the personality of this site along with the natural opulence of the year. Inky dark fruit, lavender, menthol, licorice, plum, gravel and a host of dark spice notes infuse the 2017 with seemingly endless layers of nuance. Over the last two years I have tasted several hundred Napa Valley Cabernets, both from barrel and bottle. There is no question that Dominus belongs among the elite in 2017; it is simply a breathtaking wine. If the monumental 2008 stands out for its power, structure and intensity, the 2013 is distinguished by its harmony, finesse and completeness; both vintages are very great wines but thus quite different in style. Wafting from the glass with scents of Anjou pear, crisp yellow apple, freshly baked bread, clear honey, iodine and fresh mint, it's full-bodied, ample and pillowy, with a layered, concentrated and effortlessly balanced core of fruit, uniting precision and sensuality to compelling effect. Girdled by racy acids and animated by a delicate pinpoint mousse, it concludes with a long, penetrating finish. Is this the most elegant wine Egly has produced to date? Gosset is the oldest house in Champagne, and is a favourite among wine trade insiders. This non-vintage cuvée is redolent with the aromas of mellow red apple fruit. The 2013 Brut Grand Cru Aÿ Argonne is the latest in a series of superb releases from Giraud. Unwinding in the glass with notes of buttered toast, crisp yellow orchard fruit, honeycomb, warm spices and ripe stone fruits, it's full-bodied, deep and vinous, with a layered core of concentrated fruit, incisive acids and an elegant pearly mousse. Krug's 2004 Vintage is absolutely mesmerizing. Layers of bright, chiseled fruit open up effortlessly as the wine fleshes out with time in the glass. Persistent and beautifully focused, with a translucent sense of energy, the 2004 captures all the best qualities of the year. Moreover, the 2004 is clearly superior to the consistently underwhelming 2002 and the best Krug Vintage since 1996. A blend of 198 wines from 11 different years, with the youngest the acclaimed 2012, back to a precious, powerfully aromatic lot of Verzenay Pinot Noir 1996. The final blend – 52% Pinot Noir, 35% Chardonnay and 13% Meunier – was bottled in 2013 and aged for seven years in Krug’s cellars in Reims. Yields in 2012 were 20% lower than usual because of a succession of meteorological events including frost, rain, storms and hail in winter and spring 2012, followed by the driest ripening season since 1974. Notably intense aroma with crème pâtissière dominant. Masses of extract and remarkable acidity underpinned by great depth of flavour and beautiful balance on the finish. I think this is going to be a really great, glamorous Krug Grande Cuvée that will continue to develop in bottle for many years to come. I suspect it will be even more enjoyable from the end of 2020. The length on the palate is remarkable. This is magnificently precise, a great tribute to the work of the old cellarmaster Eric Lebel, who is still in the background, and a wonderful welcome to his successor Julie Cavil, who has been learning from him since 2006.HK$10,660.00 -

The 2019 Cabernet Sauvignon Coeur de Vallee is deep garnet-purple colored. It gallops out with expressive notions of warm cassis, blackberry pie, and blueberry preserves, followed by hints of cedar chest, tilled soil, bay leaves, and iron ore. The full-bodied palate is taut, with a nice combination of bright crunchy black fruits and juicy blue fruits, supported by firm, grainy tannins and seamless freshness, finishing long and mineral-laced. The Coeur de Vallee vineyard is in Oakville, just across the road from To Kalon, and is planted entirely to clone 4 with a small amount of Cabernet Franc (clone 1), which does well on the clay-loam soil. The 2013 Salon is a huge wine. Dense and explosive, the 2013 possesses almost shocking textural richness for a young Salon. If offers a perfect example of the vintage in the Côtes des Blancs, a year in which ripeness and acids were both elevated. Lemon confit, marzipan, white flowers, mint and white pepper explode onto the palate. Bright saline notes pull it all back together on the finish. Dosage is 4.5 grams per liter.HK$25,775.00 -

This deep purple-hued beauty has an incredibly seamless, elegant, yet full-bodied style as well as killer notes of crème de cassis, blueberries, wildflowers, violets, white chocolate, and new saddle leather. Flirting with perfection, the tannin quality, purity of fruit, balance, and overall harmony here is just about off the charts. It makes you want to drink the whole bottle, but it should age effortlessly for 25+ years.HK$15,650.00 -

By contrast to the Bollinger, Comte is not a one-off, nor anything out of the ordinary. It is a label that all committed Champagne lovers adore. Predictable perhaps. But, of course, one thing does vary, and that is the vintage. The ‘worst’ Comte I ever tasted was rather lovely. The ‘best’, and there have been many (1959, 1966, 1996, 2002, 2006) are all sublime and you can now add 2011 to this list. Taittinger always seems to shun the spotlight, unlike Dom Perignon and other more attention-seeking brands and this modesty rather suits this House. I did something that I never do after first tasting my sample bottle. I was so shocked with the sheer class that I sealed the bottle with a simple Champagne stopper and then tasted it again and again over two days. The stress-testing sorts the wheat from the chaff. It is unlikely that anyone who bought a bottle would do this. Still, I like to see how a potentially great wine evolves, opens up, sometimes falls over, and sometimes blossoms over a few days because it gives me an indication of its potential and its true baseline of quality. The fruit is so tense, grand and layered it is remarkable. The flavour, the fizz, the length, the momentum and the overall halo of greatness did not change one iota over nearly 60 hours of being open with no preservation whatsoever. This is a genius, B de B and while it tastes scintillating now, I am confident that it will amaze Comte fans for decades to come.HK$5,555.00 -

The 2012 La Joie, which is a blend of 76% Cabernet, 12% Merlot, 8% Cabernet Franc and 4% Petit Verdot, blew me away. A profound effort, with 55% of it coming from Hillsides in Alexander Valley, 31% from Knights Valley and the balance from Chalk Hill, the wine shows great minerality, oodles of crme de cassis fruit, incense, licorice, crushed rock, and a provocative full-throttle mouthfeel. A wine of great intensity, purity and equilibrium, this definitely begs for 4-7 years of bottle aging and should drink well for at least 30+ years.HK$12,195.00 -

The 2015 Brut Coeur de Cuvée is a pretty dense wine that belies its deceptively mid-weight structure. What surprises me most about the 2015 is how closed it is. In most years, especially warm years, Coeur de Cuvée is quite a bit more open and voluptuous, but the 2015 does not come across like that at all. Rather, it is super-classic in bearing, with tons of gravitas from the 60-year-old vines just waiting to emerge. There are non of the awkward herbal notes that penalize so many wines. Bright saline notes extend the finish effortlessly. The 2015 is a brilliant Coeur de Cuvée.HK$5,165.00 -

The NV Brut Grand Cellier is bright, effusive and wonderfully charming. White flowers, chalk, mint and lemon confit give this mid-weight, nervy Champagne tons of energy. All the elements are so nicely put together. I especially like the energy and crystalline purity here. There are a lot of terrific wines in this range, but the Grand Cellier is quintessentially Vilmart. This release is based on 2019, with the addition of reserve wines from 2018. The 2012 Extra-Brut Les Blanc de Blancs Blanches Voies is stellar. It offers tons of brilliance and energy, especially for a year in which most wines are quite a bit more radiant. It's a style that works quite well here, though. Crushed rocks, white pepper, mint and lemon peel all build as the 2012 shows off its alluring, saline-infused personality.
