The 2018 Château Margaux is composed of 90% Cabernet Sauvignon, 4% Merlot, 4% Cabernet Franc and 2% Petit Verdot, representing 36% of the crop this year. The wine has a pH of 3.8 and 14% alcohol. Linear and focused, the elegant, racy palate has a pristine quality, delivering strawberry, orange zest and white pepper alongside bright acidity and lithe tannins. The organically-farmed vines are the estate’s youngest at fifteen years old. Fermentation takes place spontaneously in concrete tanks with no temperature control while aging occurs in French and Slavonian casks. The 2017 Gattinara is terrific. It will also give readers something to drink without waiting decades. In 2017, the Gattinara is a bit richer than it often is - the result of the warm dry year – but its profile is super-classic. Sweet pipe tobacco, mint, dried herbs, licorice, dried cherry and Alpine herbs fill out its ample frame effortlessly. I would give the 2017 a few years in bottle, but it won’t need more than that to start drinking well. In 2017, Roberto Conterno did not bottle his vineyard-designates. Instead, all the best lots went into the straight Gattinara, an overachieving wine that delivers the goods. I don’t expect the 2017 will be among the most long-lived wines here, but that will hardly be an issue for most readers.HK$2,140.00 -

The 2019 Cabernet Sauvignon Estate is off the charts. What a wine. The 2019 captures all the Togni signatures, but with both more fruit richness and energy than is the norm. A Cabernet of gravitas and consequence, the 2019 is shaping up to be one of the wines of the year. Black cherry, plum, graphite, spice and incense build into the palate-staining finish. The 2019 is a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, all co-fermented. I can't wait to taste it from bottle. All I can say is: Wow!HK$5,895.00 -

A wine to convince you of the quality and ripeness of Cabernet Sauvignon in Pauillac in this 2023 vintage, showcasing superbly supple tannins, great balance, depth and savoury blue and black fruit character, bitter cocoa bean, freshly cut herbs, black tea, fennel, all vivid and with purity of character. There is density here but it is not overt, with heightened raspberry leaf, peony and violet aromatics. Vinified in the newly-completed section of the cellars, in egg-shaped wooden vats and sunken qveri-style clay vats. 50% new oak for ageing, with 35% amphora and 15% one year old barrels. One of the wines of the vintage. New lighter bottle as of the 2022 around 490g, down from 815g in the past, 30 tonnes of CO2 saved just in terms of production. Harvest September 7, one day earlier than 2022, then slow picking through to October 10, later than many in Pauillac - and normal yields of around 40hl/h.HK$3,870.00 -

The 2016 Carema Riserva is another knock-out effort from the Produttori di Carema, the local cooperative that has really been on fire these last few vintages. Open-knit and inviting, but with all the complexity that is so typical of the appellation, the 2016 is superb. Crushed flowers, mint, sweet tobacco, cedar and licorice are all woven together in a super-expressive Carema that offers tons of complexity in a relatively accessible style for a young wine from the appellation. The Riserva is a selection of the best casks in the cellar, with the wine aged for an added year in cask, so three years’ in neutral oak in total. That extra year in oak vis-à-vis the Classico does take with it some of the fruit while emphasizing more savory and mineral qualities. Power and finesse come together so well in this textbook Carema.HK$1,540.00 -

The 2022 Chenin Blanc comes from the two old blocks planted in 1974 and 1976. It is whole bunch pressed, but unlike the Sauvignon Blanc, it is not settled and matured in foudres and used 300-liter oak, where it stayed for ten months on the lees. It has a very delineated bouquet with Granny Smith scents and light sea spray aromas, a very Zen-like Chenin that expresses the granitic terroir. The well-balanced palate has a slight viscosity on the entry, a little richer than previous vintages but without compromising tension, with hints of peach skin and yellow plum towards the finish. The 2010 Dom Ruinart is starting to open up nicely. There's still plenty of the intense, chalky minerality and energy the wine showed last year, but also a bit more mid-palate richness to balance things out. Lemon confit, marzipan, white flowers, slate and white pepper are some of the many aromas and flavors that take shape in the glass. As good as the 2010 is today, I imagine it will be even better in another few years' time. As I have written previously, the 2010 Dom Ruinart is one of the most impressive Champagnes ever made here. Guidalberto 2020 is a blend of 50% Merlot and 50% Cabernet Sauvignon, matured for 15 months in oak (20% new), including a small percentage of American oak. The aromas are a little heavier, with ripe dark fruit and a fragrant, floral note. It's a little less finely detailed aromatically than the 2021, with some smoke, spice and green herb qualities. The palate is round, medium-full bodied with juicy, bright acidity. It's a very friendly wine with very fine tannins and there's a little more grip and silty texture to the tannins.HK$1,510.00 -
