This is a very pure expression of cabernet sauvignon with blackcurrants, blackberries and tar. Wet earth, too. It’s full-bodied, yet very tight and reserved. Extremely racy, intense finish. This is super precise. Classical.HK$2,445.00 -

A fantastic 2017 from Margaux with a deep and ripe core of fruit in the center palate. Silky and juicy tannins. Full body, plenty of fruit and a long, flavorful finish.HK$2,800.00 -
Jasper Morris Inside Burgundy (92)
A glowing pale lemon yellow. There is a clear white fruit charm to this, a little more chiselled than the softly welcoming Chenevottes, with a limestone length and purity at the finish. Drink from 2027-2032. Tasted: October 2023.HK$3,795.00 -
Vinous (93)
The 2022 Chassagne-Montrachet Clos de la Maltroie 1er Cru is actually more backward on the nose compared to the Village Cru, tightly coiled with mineral-driven, malic fruit. The palate is well balanced with neatly integrated oak on the entry. Fresh and saline, there’s ample grip toward the finish, with just a touch of grilled walnut and fine length. Excellent. Jasper Morris Inside Burgundy (93)
An attractive mid lemon colour. The nose is a little more backward, but the palate delivers impressive tension along with the usual complete mouthful of the purest white fruit. Tension pursues all the way through and the ripeness is perfect. This is not the most fruit forward of Chaumées I have tasted here, but has all the qualities for ageing well. Jasper Morris Inside Burgundy (92)
Pale colour with a lime time. A fresh raw fruit energy to the nose. The white fruit expands vividly across the palate, the same light toast from the oak, but nicely integrated, this is a Chassagne with considerable charm that can be drunk early, but has a fine thread of minerality through to the back. Jasper Morris Inside Burgundy (90)
A clear pale lemon. A pretty bouquet, more floral, without the sulphur reduction of the Bourgogne Blanc. Clean and even quite chiselled, pure white fruit, just a little heat behind, and some barrel toast. However, the core fruit is very attractive and has some muscle. Fair tension behind. Drink from 2025-2028. Tasted: October 2023.HK$5,320.00 -
James Suckling (98-99)
So much class in the nose with a sophisticated kaleidoscope of dark fruit such as blackcurrants, and spices such as salt and pepper, as well as cloves and nutmeg. Full-bodied. Compacted and dense yet weightless. It opens beautifully. The tannins go on and on with wonderful presence. Salty undertones.HK$17,095.00 -
The Drinks Business (95-97)
Rauzan-Ségla (Margaux; 75% Cabernet Sauvignon; 25% Merlot; 13% alcohol; a final yield of 38 hl/ha; aging in oak barrels, 60% of which are new; tasted at the property and at the UGCB press tasting; Eric Boissenot is the consultant). A tiny bit of Cabernet Franc was in fact co-vinified with the Cabernet Sauvignon. Mildew damage reduced the amount of Merlot here. This is intensely perfumed and extremely expressive aromatically with the parfumier’s essence of violets and wild hedgerow flowers, rose petals, graphite by the nuclear reactor core-load and a rich deep, dark, cool autumnal fruit. There are also tiny wild strawberries , blood orange, and that gorgeously tender cedar note one so associates with Rauzan-Ségla, dark roast coffee beans and grated dark chocolate. This feels very composed and natural, an object lesson in purity and precision. There is a lovely fleshy softness on the attack, with super-svelte tannins. The mid-palate seems both sinuous and yet linear, precise and focussed but with great concentration and perfect harmony. There’s also a superb natural sweetness. Gentle aeration brings more cassis notes into the mouth and a refreshing sapidity. Overall, there is great plenitude, considerable tension and class without opulence. And in 2021 the wine is more floral than ever. It continues its rich vein of form, with the chewy tannins and lift on the finish hinting at the potential longevity. All the Chanel estates are in their first full year of conversion to organic viticulture, making the final yield all the more impressive. Really superb.HK$3,665.00 -

Tasted blind. Rich and rather opulent nose. Simple and easy with good refreshing raciness. Could be Rauzan-Ségla? Good and complete. Really zesty. Likely to be VGV.HK$1,505.00
