Nicolas Audebert and his team have done it again. The 2017 Canon is shaping up to be one of the wines of the vintage. Rich and vertical in construction, the 2017 possesses off-the-charts richness and intensity in all of its dimensions. In the glass, the 2017 is sumptuous and layered, with superb detail and tons of sheer pedigree. In 20 years, readers will have a fabulous time tasting the 2015, 2016, 2017 and 2018 together and debating their respective merits. Dark plum fruit, striking Franc aromatics and the clean, focused energy of Saint-Émilion's limestone plateau make for a ravishing, exquisite wine of the highest level. Born from Veneto's fabled Valpolicella region in Italy, this wine is a testament to meticulous viticulture and winemaking practices. Monte Faustino, a bespoke winery where the Fornaser family exudes passion and respects deep-rooted Italian traditions, is renowned for its singularly stunning wines.
The 2017 vintage involves hand-picked Corvina, Rondinella and Molinara grapes, partially dried on 'arele' trays, enhancing intensity and concentrating aromas. The fermentation process, followed by a 30-month maturing period in Slavonian oak barrels, yields a beautifully balanced wine that defies comparison.

Fashioned from remarkably low yields, this blend of 90% Merlot and 10% Cabernet Franc is a powerful, dense, tannic wine that will require considerable time to round into shape. It exhibits a dense purple color along with sweet aromas of mulberries, black currants, minerals, cold steel, graphite, and background spice. Full-bodied, highly-extracted, dense, and made in an unfashionably tannic, broodingly backward style, this is a wine for the ages. Taittinger's 2006 Comtes de Champagne Rosé has come along nicely over the last six months. Intensely perfumed, Pinot-inflected aromatics carry through the mid-palate and finish as the 2006 shows off its depth and pure energy. Veins of chalky minerality give the red berry and cranberry flavors an extra kick of energy. The 2006 is both powerful and delicate at the same, with crystalline precision and fabulous depth. Hints of orange peel, mint, cinnamon and cranberry add further shades of nuance on the complete, beautifully articulated finish.HK$8,565.00
