The 2020 Chambertin Grand Cru was completely de-stemmed and has an intense bouquet with blackberry, briary, undergrowth and a light floral scents. The palate is medium-bodied with a slightly peppery opening - in fact, you might be deceived into thinking there were some stems in this Chambertin. Bright, deep red. Reticent but highly complex scents of raspberry, rose petal, white pepper, red licorice and mint. At once silky and sharply delineated, conveying outstanding intensity without any undue weight. Utterly seamless Chambertin if a bit youthfully linear today. The very long, rising finish is lightly saline and classically dry. Fourrier told me he has no plans to produce more than 30% as much négociant wine as domain wine in future years.HK$23,530.00 -

The 2017 Chambertin Grand Cru has a charming, quite regal bouquet with layers of crushed strawberry, raspberry and crushed iris aromas that blossom with aeration. The palate is very refined, beautifully focused with a silver bead of acidity. There is a sorbet-like freshness from start to finish, a gentle crescendo of flavours towards the blackberry, raspberry and orange zest finish that lingers persistently in the mouth. This is a blend of Chambertin itself (two-thirds) and one third Clos de Bèze. Glowing imperial crimson purple. The nose has it all, clearly all the nobility it should have. The crunchy mineral tension found throughout the Fourrier wines pays dividends here. There is exceptional intensity but it is beautifully judged. The 2015 Chambertin Clos de Bèze Grand Cru is a class act in the making, perhaps one of the finest barrel samples that I have tasted from Drouhin. This gem has a gorgeous and extraordinarily pure bouquet with crushed strawberry, pomegranate and overripe orange scents that are exquisite and beautifully defined. The palate is medium-bodied with super fine, almost filigree tannin that seem to caress the senses. It constitutes the most sophisticated of Drouhin's 2015s with ineffable finesse on the finish that lingers so long in the mouth. This is simply a brilliant wine.HK$28,605.00 -

Picked 8–11 September. High percentage of whole bunch – 40%. 'I had a crush on this wine this year', says Véronique Drouhin. Cask sample. Mid crimson. So pretty: red fruits, a stemmy freshness that is leafy but in a lovely way, not at all underripe. Fabulous depth and length but with an elegant shape, not exactly slim but perfectly proportioned, like the body of a yoga expert, sinewy and strong but not lean. On the palate, it's medium to full-bodied, ample and satiny, with a sappy core of nicely concentrated fruit, fine tannins and bright balancing acids. The Mazis is a highlight of the Drouhin portfolio this year, offering up an utterly classic nose of wild berries, cassis, gamebird and bonfire. Bright ruby. Knockout nose combines cassis, blackberry, minerals and smoked meat. Creamy, deep and layered, combining outstanding concentration and superb inner-mouth lift. Finishes with a whiplash of black fruits and licorice, the tannins thoroughly buffered by the wine's extract. An infant today but already very subtle on the aftertaste.HK$36,550.00 -

An elegant, pure and broad-ranging nose is composed of very fresh, cool and airy aromas of both red and dark currant, spice and earth scents where the wood treatment is admirably subtle if again not invisible. There is a lovely mouth feel to the attractively intense and well-concentrated flavors that coat the palate with dry extract before culminating in a refined, well-balanced and beautifully persistent finish. On the palate, the wine is multidimensional, expansive and full-bodied, with fabulous concentration and depth and wonderful sappy energy, its ripe tannins cloaked in layer after layer of fruit. There is absolutely superb intensity to the super-sleek texture of the broad-shouldered flavors thanks to the fine-grained tannins that also shape the moderately austere and equally long finish.
