The 2017 Chablis, a blend of sites all in Courgis, is sublime. Creamy, ample and layered, the 2017 is a fabulous introduction to these wines. Lemon confit, mint, apricot and sweet floral notes are all laced together in a Chablis of total nuance and class. Rich and oily on the palate with superb textural intensity, the 2017 Chablis is a real winner. Aging in steel keeps the flavors bright. What a wine. The palate is well balanced with an oily texture, perhaps a bit more solids in this Chablis that lend complexity. It does not quite deliver the mineralité and nervosité on the finish, however. (bottled in January of 2016; all of the premier crus were bottled just before the 2015 harvest): Bright yellow. Yeasty baked bread and rocky calcaire dominate the nose. Dense, full and energetic; fat and silky for the vintage but classically dry and stony. Subtle notes of pineapple and flowers add complexity. Best today on the subtle, slowly mounting back end, which spreads out to saturate the palate with liquid stone. Not yet especially demonstrative but, with its penetrating stony minerality, this wine is built for a long life in bottle.HK$920.00 -

Pale, green-tinged yellow. Reticent aromas of mirabelle and iodine. Then tight but sappy in the mouth, with lovely inner-mouth perfume and lift to the lemon, wet stone and mineral flavors. This tactile, classic wine demonstrates the terroir more than it does the vintage. Colder, clay-rich soils, as is the case here and in Montee de Tonnerre, did very well in 2006, noted Raveneau.HK$4,235.00 -

Quite closed on the nose, hinting at menthol and wet stone. Then juicy and tight in the mouth, more taut and incisive than silky today, and showing superb precision for the vintage. Another sample from a 2009 barrel: More closed but with similar spice notes to the flavors of pineapple, lemon and wet stone. Finishes tactile, very dry and long, with strong minerality. That fresh marine influence translates into a palate that displays exquisite balance and just a hint of toffee apple, closing in slightly toward the finish. There is so much tension and grace here.
