Vinous - Antonio Galloni (95)
The 2017 Raveneau Chablis Butteaux 1er Cru is in fine shape. A touch of decanting, which I always do for younger Chablis, really allows the aromas, flavors and textures to shine. The 2017 is in the perfect spot today, as it offers a good deal of complexity yet remains quite vibrant. Citrus confit, marzipan, white pepper and floral overtones show the textural resonance of a fine Chablis with bottle age. Clean, bracing mineral notes start to appear over time. Superb.HK$28,605.00 -

An interesting and beautifully layered nose reflects notes of soft wood, white orchard fruit, citrus confit, iodine, tidal pool and shellfish. The rich, concentrated and quite serious larger-scaled flavors flash plenty of minerality on the muscular and saline-suffused finish that goes on and on. This too is terrific with outstanding development potential; indeed, I would go so far as to say that this is one of the best vintages for the Raveneau Butteaux in some years and I include the 2010 and 2014 in that assertion.HK$3,365.00 -

(5 Star Wine) Pale colour I instantly fall in love with this nose. An explosion of fresh white peaches on the nose, really gorgeous, with a massive concentration without heat or being clumsy. What else to say?HK$36,240.00 -

There is excellent volume to the concentrated and powerful medium weight plus flavors that flash evident minerality on the markedly dry, youthfully austere and highly complex finale. Quite tight today and less expressive and refined than the Montee de Tonnerre but this penetrating, bound-up wine boasts superb vinosity that's rare for the vintage. Smoke, flint and a whiff of citrus skin on the nose. Fat and sweet, with citrus and quinine notes; a bit more pristine in the mouth than on the somewhat reduced nose. Dense for the vintage, and quite persistent on the aftertaste.HK$4,080.00 -

Pale, green-tinged color. Aromas of lime, wet stone and menthol. Round and ripe, with appealing flavors of stone fruits and acacia flower. Fat and broad but dry and classic, with plenty of stuffing. Very good but a bit less pristine than the 2006 version.HK$4,565.00 -
Vinous - Stephen Tanzer (91-93)
(still in cuve Pale lemon-yellow with a green tinge. Perfumed aromas of citrus fruits, powdered stone, ginger, curry powder and flowers. Saturates the mouth with pineapple, grapefruit and brown spice flavors, offering the sucrosite of the 2007 but with even more energy and precision. Impressive potential here.HK$4,825.00 -

The 2009 Chablis Les Forets is long, pure and beautifully delineated. There is a centeredness and focus to the fruit that is compelling. White stone fruits and flowers frame the delicate, haunting finish. Anticipated maturity: 2011-2019+.HK$4,590.00 -

The 2010 Chablis Foret is rich, layered and totally sensual. A highly expressive tapestry of aromas and flavors emerges from the glass in this rich, textured wine. The Forest is all about harmony. The 2011 isn't the most complex Foret, but it is likely to drink better earlier than some of the other wines in this lineup because of its round, immediate personality.HK$5,470.00 -

Aromas of pear, lemon and grapefruit, plus a lactic nuance that dissipated with air. Juicy and gentle, with vibrant, floral, mouthfilling flavors nicely framed by harmonious acidity. The 2012 Chablis Forêt is all about texture. Describing the aromas and flavors is a bit futile, as it is the tactile sensations that captivate the senses. Persistent and silky, the 2012 boasts superb length and resonance. I imagine the Forêt will offer considerable pleasure as it develops in bottle over the next two decades. Bright, saline notes punctuate the highly expressive finish.HK$45,760.00 -

The palate is fresh on the entry with crisp acidity, clearly a level up from the village cru, with hints of shaved ginger flourishing toward the finish. This is showing nicely. The 2016 Chablis Forêt 1er Cru is a little more tight-lipped on the nose compared to the Les Montmains, requiring more coaxing from the glass. That could be a sign of bottle shock. The palate is very promising with a crisp line of acidity, gentle grip and a live-wire, spicy finish that matches the exotic style of the vintage. This warms up in the glass and shows great potential, but may require your patience.HK$6,100.00 -
