The 2021 Chablis Fôret 1er Cru is where things start getting serious for Raveneau with a chiselled, orange blossom and flinty bouquet that unfurls nicely in the glass. The palate is well balanced with a fine thread of acidity, subtle apricot and quince notes surfacing with time, quite elegant, almost dainty in style with a persistent finish. The Montmains comes across as quite generous and sensual, with hints of white peaches, flowers and mint that caress the palate on the polished finish. The 2013 Chablis 1er Cru Montmain has a detailed bouquet with cold flint and even blackberry-leaf scents that are beautifully defined. The palate is fresh and vibrant with a keen acidic thread, driving citric notes with a slight walnut tinge on the tensile, orange rind finish. This lingers long in the mouth and should age better than the Fôrets '13.HK$4,800.00 -

The 2014 Chablis 1er Cru Montmain has a lifted bouquet with granite and slate-like aromas, a little withdrawn at the moment, but you can tell this will repay 3-4 years in bottle. The palate is fresh and vibrant with crisp acidity, hints of orange rind and lemon zest, good depth in the mouth with fresh pear and quince towards the finish. Impressive, but it will need time. The 2015 Chablis 1er Cru Montmain, which was touched by hail, offers a sense of depth and power on the nose. This is clearly more backward than its peers but very well defined. The palate is rounded and slightly honeyed on the entry with a fine thread of acidity. It builds in the mouth but there is something broody about this Montmains which makes it beguiling. Give this two or three years at least because instinct tells me it will repay those with the nous to cellar this Chablis away.HK$3,430.00 -

The 2016 Chablis Les Montmains 1er Cru has a very composed bouquet with dried honey, orange zest and light fennel aromas, perhaps less mineralité than previous vintages yet still very attractive. The palate is clean and precise, quite linear and tightly wound at the moment, but there is impressive weight matched with elegance towards the finish with flecks of white chocolate lingering on the aftertaste. The 2019 Chablis Montmains 1er Cru has a wonderful, refined bouquet. A little earthier than the Vaillons, with undergrowth and chalky scents coming through. This compellingly fresh, still-youthful midweight is not at all a thick style of Chablis--nor does it possess the 2002's sweetness of fruit--but it's brisk, precise and bone-dry, with urgent wet-stone salinity and sneaky rising length. Surprisingly bright yellow. Mint, honey, truffle and a balsamic note on the rather unusual nose, with a hint of citron confit the only clear sign of fruit. Fat, chewy and thick, revealing a hint of bitterness from thick grape skins. The lemon note carries through on the palate of this rather uncompromising, even tannic Chablis. This will get more truffley as it continues to unfold. Not gone, says Isabelle, succinctly. I would not be surprised to find more flavor interest with further aging, but this wine will never become Chablis-like.HK$4,235.00 -

There is nothing awkward at all about the 2004 Chablis Montée de Tonnerre 1er Cru, which is mind-blowingly beautiful from the moment it is served. Vibrant and bursting with life, the 2004 possesses dazzling intensity from start to finish. Tangerine oil, lemon confit, wild flowers and slate are some of the signatures, but more than anything else, the 2004 stands out for its exquisite beauty and overall harmony. A rush of floral and mineral notes leaves a long and lasting impression on the close. At fifteen years of age, the 2004 is in the sweet spot for delivering pure pleasure, but it will drink well for many years to come. What a wine!HK$4,020.00 -

Bright yellow with a green tinge. Classic Montée de Tonnerre aromas of lemon ice, crushed rock, iodiney minerality and white flowers. floral, lemon ice, straight and classic. Tactile, juicy and utterly gripping--in fact still almost painful today. Powerful salty minerality and penetrating acidity currently dominate the wine's lemon oil, grapefruit and floral flavors, with the wine showing a weightless impression. The dusty mineral-driven finish stains the palate and builds inexorably. (When I first tasted this wine from the barrel, I suggested that it might be the longest Chablis premier cru of the vintage.) Drink the 2010 for lunch now but hold this magical wine for another couple years, as its spring is still tightly coiled. This was my favorite wine of the tasting. The 2014 and 2010 vintages may be richer and deeper, as Isabelle Raveneau suggested to me three years ago, but this '08 is utterly classic. (12.69% alcohol; 3.14 pH; 4.4 g/l acidity; the days were sunny but the nights were quite chilly during the relatively early harvest of 2008, which concentrated the sugars and acidity, noted Isabelle Raveneau)HK$6,660.00 -

The Montée de Tonnerre possesses dazzling purity all the way through to the finely articulated, chiseled finish. This is yet another superb effort from Raveneau. The bouquet is steely and aloof at first, then suddenly turns more crystalline, bearing a strong marine influence with hints of kelp and sea spray. The balanced, penetrating palate displays a perfect line of acidity. Everything is in the right place here, culminating in what I wrote down as a “rocky” finish. The 2011 Chablis Montee de Tonnerre is all about grace. A gentle hint of spice leads to dried pears, crushed flowers, red berries and licorice. Constantly changing in the glass, the 2011 is a marvel to behold. Suggestions of smoke, graphite and licorice add layers of nuance in a magical wine loaded with class and personality. Best of all, the 2011 is relatively approachable by Raveneau standards, which means reader won't have to wait long at all to experience the magic of one of the great sites in Chablis.HK$48,960.00
