One of the eldest and most important négociants in Burgundy, Domaine Bouchard Père et Fils has long been a fixture of the Burgundian landscape, delighting devotees and savvy consumers alike thanks to their excellence and relative affordability.

Since 1731, Bouchard has been assembling a collection of some of the best vineyards across the spiritual home of Pinot Noir and Chardonnay, including plots within 12 Grand Crus and no less than 74 1ers Crus. Some of their most notable holdings were even added during the French Revolution when property from the clergy and nobility was seized and put up for sale. As a grower, producer and négociant, it is undeniable that Bouchard Père et Fils has played a significant role in the history of Burgundy.

Today, the historic producer is led by Stéphane Follin Arbelet with Philippe Prost as winemaker long before its acquisition by Champagne Joseph Henriot in 1995. Investment by the new owners precipitated modernisation in the best sense of the word, with an incredible gravity-flow based winery being completed in 2005, allowing the ancient label to craft its classically structured wines with maximum efficiency.

Bouchard Père's historic 4ha parcel at the centre of this excellent premier cru is the 'filet mignon' of Grèves, according to Frédéric Weber. Owned by the négociant since 1791, this is an intense, aromatic, engagingly floral Pinot Noir with 15% stems and 30% new wood and good support from tannins and balancing acidity.

This is very classy and punches with many more expensive Premier Crus in the Côte de Nuits.

Already wonderfully aromatic in the mouth, and lifted by its new oak component. Seems richer than its 13% alcohol would suggest. Slowly building finish goes on and on.

Pale, bright yellow. Reticent but complex nose hints at lemon, lime, iodine and crushed stone, with complicating notes of ginger, quinine and white pepper emerging with air. Large-scaled, classically dry and powerful in a Montrachet way, with rather austere flavors of crushed stone, pepper and iodine dominating today. Showing more oak today than the "regular" Chevalier-Montrachet and harder to taste. This will be slow to evolve.

Tasted blind at the Burgundy 2012 tasting in Beaune. The 2012 Chevalier Montrachet la Cabotte Grand Cru from Bouchard Père & Fils has a slightly more exotic bouquet within this flight with touches of white chocolate and almond originating from the more generous and conspicuous use of new oak. It needs time to fully integrated. The palate is concentrated and lightly honeyed, the acidity nicely judged but there is a nagging feeling that it was picked a little too late, reminiscent of some of those 2006s on the finish that is missing some delineation. Returning to the glass it actually becomes more refined and elegant, with a saline tang on the finish. This must represent one of Bouchard's finest contributions to the vintage.

Tasted blind at the annual “Burgfest” tasting in Bouilland. The 2013 Chevalier Montrachet la Cabotte Grand Cru has an intense bouquet with clear honey, yellow flower and subtle passion fruit notes that gradually recede and then are replaced with beeswax and honeysuckle. The palate is straightforward on the entry with fresh lime, citrus fruit and a dab of spice, although it does not quite carry through to the finish that dips before the finish line. Not bad, but it does not quite justify its strong performance from barrel, at least not yet. Tasted May 2016.

The 2015 Chevalier-Montrachet La Cabotte Grand Cru offers up a youthful but expressive bouquet of hazelnut, apple, preserved citrus, pear and almond paste. On the palate, the wine is medium to full-bodied, intense and racy, with a lovely line of succulent acidity, and a penetrating, chalky finish that lingers on the tongue. While this is beautifully fresh and vibrant for a 2015 white Burgundy, it's also quite structurally giving and should drink very well on release.

Musky, deeply pitched aromas of smoky oak and Montrachet-like iodiney minerality (La Cabotte is the northeastern section of Chevalier-Montrachet, which was part of Montrachet until early in the 20th century). Big, rich and deep, with savory minerality currently dominating ripe stone fruits. This very tactile, salty wine may be less energetic in the early going than the "regular" Chevalier-Montrachet but then it's in more of a Montrachet style, like the 2015 version: large-scaled but quite dry and classic and not expressive today. Also more tannic on the back end, and still with a malic note of spiced apple, along with an intriguing suggestion of peony remaining in the empty glass.
