Ramonet
Domaine Ramonet was established in the late 1920s by infamous Pierre Ramonet. It has been recognised for some time as the leading estate in the Chassagne. Now under his grandsons Noel and Jean-Claude they have remained remarkably consistent with superb Chardonnay at all levels. Their masterpiece Montrachet is on the wish list of collectors and wine lovers alike. They also offer some increasingly popular red wine.

Hints of mineral reduction and matchstick character suffuse the elegant aromas of honeysuckle, acacia blossom and spiced pear that are trimmed in wisps of wood and lemon rind. The super-sleek, intense and nicely detailed flavors possess good richness on the citrusy and beautifully long finale where moderate warmth slowly emerges. This elegant effort is perhaps a bit bolder and powerful than is usually the case and a BBM that should age gracefully over the next decade.HK$43,415.00 -

(Outstanding) A slightly fresher nose also reflects elusive suggestions of the exotic on the aromas that also display hints of citrus confit, white flower and whiffs of dried herbs. There is better vibrancy and detail as well as more obvious minerality on the medium-bodied flavors that are better-balanced, more persistent and markedly more complex. This is lovely and a wine that should reward 8 to 10 years of cellaring yet one that should be approachable after only 4 to 5 years.HK$4,840.00 -

Here too there is just enough reduction to push the underlying fruit to the background but it's not so heavy as to obscure the fact that it's ripe with white fleshed fruit and just a touch of oak. The super-sleek, delicious and vibrant flavors are presently relatively compact on the agreeably dry finish that flashes a touch of warmth. The oak does reappear, and this is mildly awkward today so I would suggest allowing this at least a few years to integrate its wood and better harmonize.HK$16,735.00 -

Even with air the nose remains exceptionally restrained and even aggressive swirling barely reveals the highly spiced aromas of white peach, pear, just sliced fennel, jasmine tea and, like the Chevalier, a touch of mintiness along with the barest nuance of wood. There is fine though not massive density to the refined yet powerful and muscular larger-scaled flavors that possess almost painful intensity on the bone-dry, clean and taut finish that is seriously long because just as it seems to be dying away, it suddenly returns. In the category of a nit, there is noticeable warmth even if it's not really enough to impair the overall sense of balance. As one would expect from one of the most storied wines in all of Burgundy, this sports serious upside development potential which I would peg at between 12 and 15 years for the 2018 version of the Ramonet Montrachet.HK$48,635.00 -
