Matured in 25% new oak and 90% whole bunches, the 2019 Chambolle-Musigny Les Sentiers 1er Cru is the most opulent of Groffier’s 2019s with kirsch and orange zest infusing the red berry fruit. The palate is medium-bodied with a little oak to be subsumed on the entry. Good weight, quite muscular for a Chambolle with liberally sprinkled black pepper enhancing the finish. At once rich and juicy in the mouth, with firm acidity giving the black fruit flavors a penetrating quality for the vintage. Comes across as clearly more tannic than the 2016 version but with plenty of buffering material. Nicolas Groffier mentioned that it was hard to taste in November and it has since changed now in bottle. It has a light, pure, floral bouquet with discrete oyster shell scents that develop with aeration. The palate is medium-bodied with a supple, very detailed entry that really took me by surprise with its elegance. The 2021 Gevrey-Chambertin Les Seuvrées has a light nose with airy red fruit, quite tertiary in style, well defined if missing a bit of intensity. The palate is nicely poised on the entry, with crisp and slightly brittle tannins and fine acidity. It needs to develop more matière on the finish as it come across a little "skinny" at the moment. I feel that this is a cuvée that might have benefitted from some de-stemming.HK$10,990.00
