(this site features barely a foot of dark soil over limestone and rock; entirely destemmed): Dark red-ruby. Fresh, subtle aromas of smoky black cherry, spices and sexy earth tones. A supple, juicy midweight, with nicely focused berry and cherry fruit flavors accented by spices. Ripe tannins spread out to dust the palate on the firm but sweet back end. Healthy medium red. Very ripe, pungent aromas of cassis, blackberry, coffee and mocha, with a suggestion of hard candy. Lush and silky-sweet in the mouth; not as complex as the Reas but boasts a wonderfully pliant texture and a very long, smoothly tannic finish. Incidentally, Thibault Liger-Belair believes that by vinifying the 2013 version of this wine with some whole clusters for the first time, he was able to build a longer and more vibrant wine. (50% new oak; 25 hectoliters per hectare; destemmed owing to the flies): Healthy bright red. Slightly reduced aromas of dark cherry, spices and crushed rock lifted by a refined floral quality. Juicy, dry and very primary; this unforthcoming, rocky wine is hiding more than it's showing today. Best now on the perfumed, firmly tannic, lingering finish. All in reserve. The Gruenchers finished its malolactic fermentation very late and like some of the following wines it may not be racked until after the winter, with the bottling taking place as late as June or July.HK$8,095.00 -

(40% vendange entier; 50% new oak; this wine was not made in 2016 owing to the frost): Bright, dark red. Terrific crushed-rock lift to the red berry and floral aromas. Suave and fine-grained on entry, then larger-scaled on the back half, opening out and building on the finish. Tannins are dusty and broad. Very shy now but leaves behind a lovely perfume in the empty glass.HK$9,060.00 -
Jasper Morris Inside Burgundy (94-97)
70% whole bunches, in the trimmed stem version. Dense black purple, and a very rich dark raspberry fruit with some black cherry. Almost exaggerated but in fact not. Thibault notes that elements of finesse became apparent later in the vinification rather than at the start which is interesting. Work at the end paid off. This becomes so much more stylish than one could imagine from the initial attack. Long classy and charming.HK$12,125.00 -

The 2016 Corton-Renardes Grand Cru is reduced on the nose, although it should blow off with time to reveal the blackberry, raspberry and marine scents underneath. The palate is medium-bodied with sappy red fruit, saturated tannins and well judged acidity. The 2017 Corton-Renardes Grand Cru includes 40% whole bunches with around two-thirds new oak. It has a lively bouquet of blackberry, briar, hints of cassis and an almost pastille-like purity. The palate is medium-bodied with rounded but quite firm tannin that lends this Corton-Renardes good backbone. This really fills the mouth, and I find a little more precision here compared to the Charmes-Chambertin tasted directly before, along with impressive mineralité. The 2018 Bourgogne Grand Chaillots is a mix of Chambolle-Musigny and Nuits Saint-Georges fruit, and it had been racked two weeks prior to my visit in December. It has a pretty raspberry and cranberry bouquet, floral in style, with subtle vanilla notes emerging with time; you cannot detect the 20% whole bunch. The medium-bodied palate offers sappy red fruit, and the whole bunch lends freshness and a subtle pepperiness toward the finish. Very fine.HK$2,050.00 -

From five plots. Fresh and quite deep purple. Not much nose at first and then some flowers emerge, including the traditional violets. Bright, dark red-ruby. Vibrant aromas of blackberry, licorice and wild herbs, along with a smoky carbon suggestion. Densely packed and highly concentrated, with a firm tannic spine giving shape and definition to the fresh dark berry flavors. Sweet red berries, rose petals, chalk and bright saline notes abound. There is so much to look forward to here. The 2012 was vinified with fully destemmed fruit and aged in 40% new oak. Bright ruby-red. Black raspberry, licorice and dark chocolate on the slightly reduced nose, with a spicy quality emerging with air. Wonderfully plush, concentrated and velvety, conveying a spherical impression of volume that has something in common with the Saint-Georges. The black cherry flavor is complicated by hints of earth and flowers and enlivened by saline minerality. This edge-free wine maintains its freshness on the back end, finishing with fine, dusty, building tannins and lovely perfume. At this point in our tasting, Liger-Belair noted that in some vineyards in 2016, he lost 40% of his grapes to frost and another 20% to galloping mildew, noting that he was late on one vineyard treatment and spent the following weeks in reaction mode.HK$13,490.00 -

The 2018 Clos Vougeot Grand Cru contains 40% whole cluster from the oldest parts of the vineyard, the younger vines de-stemmed. Apparently it struggled to complete its alcoholic fermentation and had to be transferred back into barrel, where it finally finished in June 2019. It has an intriguing bouquet with brown spices and black pepper infusing the vibrant red fruit that leaps from the nose. The palate is well balanced with fine, saturated tannins. The whole bunch is very well assimilated and lends complexity and precision on the finish. Superb.HK$11,195.00 -

It has quite a lively bouquet with red cherries, cranberry and flinty aromas, good tension here. The palate is medium-bodied with sappy red fruit, fine acidity, smooth in texture with a touch of white pepper and bay leaf towards the finish, dessicated orange peel lingering on the aftertaste. A brooding and very earthy nose is more deeply pitched and very Gevrey in character. The rich, concentrated and more powerful medium-bodied flavors are firmly structured and serious while exhibiting touch of bitter pit fruit and youthful austerity on the balanced and highly persistent finish.
