Domaine William Fèvre
About Domaine William Fèvre
Founded and extensively developed by the eponymous William Fèvre between 1957 until his retirement in 1998, this Domaine’s wines are amongst the most sought-after and frankly exceptional in the entirety of Chablis, a region populated by more than its fair share of great labels.
A measure of the ambition and vision of the estate’s founding father, Fèvre began with a modest 7 hectares of Chardonnay vines spread across Chablis. By the time of his selling to Maison Joseph Heriot (of Champagne fame) in 1998, his eponymous Domaine was comprised of 48 hectares dotted around the very greatest Grands and 1er Crus.
The change in ownership heralded the arrival of Didier Séguier, previously of Bouchard in Beaune, a vigneron who has subsequently shepherded Domaine William Fèvre to new and breath-taking heights, building on the extraordinary work of its founder. Overseeing a continuation of practices such as pure hand-harvesting, Séguier is also working hard to shift the Domaine to fully biodynamic methods in order to extract the full potential of the exceptional terroir at his disposal. The most immediately noticeable development in these wines, however, is the reduction in new oak.
Always a controversial topic, especially in Chablis known for its crisp salinity and pure minerality, William Fèvre’s penchant for new oak drew as many detractors as ardent fans. Today, no new oak at all is used in the various cuvées, but rather Séguier utilises his former employers Bouchard as a supplier of one year old barrels to be used in a ratio of up to 80% for those Grands Crus which can take it.

Tim Atkin MW (97)William's father planted these vines in 1947, 1948, 1950 and 1952. All are in the upper part of Les Clos. Their positioning simultaneously offers freshness and power. Yellow cherries, yellow tomatoes and summer herbs deliver a bold palate. It's a tsunami of flavor, and the structure is equally dominating. Give this time to harmonize further though it wouldn't disappoint if you sipped it now. 2026-45 |

Burghound (93-96)Cool and strikingly elegant aromas include those of quinine, white peach, spice and an abundance of classic Chablis notes. The dense yet wonderfully refined medium-weight flavors brim with dry extract on the gorgeously long, balanced and highly complex finale. This is extremely stylish and very promising. (93-95)/2033+ |

Jasper Morris Inside Burgundy (95-98)(5 Star Wine) Mostly from old vines, a good half planted between 1948 and 1952. Translucent lemon and lime colour. The bouquet is not ready to unfurl yet there is a sense of sublime purity about the nose. A wine in perfect harmony on its wide bench of white fruit. Just a little touch of spice behind, good acidity. Sign up for this! Drink from 2032-2045. |

Burghound (96)This is arguably the most elegant wine in the range with its ultra-pure aromas of quinine, oyster shell, mineral reduction and floral elements that are also trimmed in just enough wood to warrant commenting on it. There is a caressing, even seductive mouth feel to the beautifully well-delineated and concentrated medium-bodied flavors that possess an almost delicate quality before culminating in a nearly startlingly explosive finish that just goes on and on. This bone dry effort is an exercise in harmony and grace, or otherwise expressed, a classic Preuses. In a word, brilliant. |

Wine Advocate (93)The 2013 Chablis Grand Cru Les Preuses has an austere, wet granite, nettle and saline nose that is nicely poised. The palate is fresh and crisp with a keen line of acidity, a potent marine influence here with bundles of crisp Granny Smith apples mixed with lemongrass and lime toward the tensile finish. This is one of the best wines from William Fevre in 2013. |

Decanter (97)This comes from two parcels, facing east and south-west, respectively, making a very tidy 2.5ha in total. Showing the delicate touch of one of the very best winemakers in Chablis, this is a saline, focused, wonderfully structured Preuses that has plenty of grip and acidity, sappy, bone-dry flavors and remarkable length. |

Wine Advocate (95)The 2019 Chablis Grand Cru Les Preuses bursts from the glass with scents of orange oil, warm bread, crisp stone fruits and oyster shell. Medium to full-bodied, elegantly textural and enveloping, yields of only 23 hectoliters per hectare mean that it's immensely concentrated, with racy acids and a long, pungently intense finish. |

Tim Atkin MW (95)From the heart of Preuses, this wine has density, glycerol, chewiness and tension that all make it clear this is a wine of consequence. In total, there are 2.5 hectares chez F vre, of which one is western-facing. Hence, there's lots of sunny vinosity with exuberant orchard fruits. The textured, chalky finish offers good grip. 2024-40 |

Decanter (96)Beautiful mix of richness, grace and drive. As always with Fèvre's Les Preuses, this is elegant, long-living and fine. Ultra-stylish and very mineral. From two sections of vines. One situated low down on Les Preuses next to Vincent Dauvissat's plot, on the flatter part facing south, the other on deeper soils, with both adding richness and totalling 2.5ha. |

Burgundy | 1 | 92-95 (VN) | HK$5,845.00 | |||||
Vinous (92-95)(production here was just 22 hectoliters per hectare, according to Didier Seguier): Pale, green-tinged yellow. Lemon, lime, white pepper, menthol, botanical herbs and powdered stone on the enticing nose and palate. Densely packed, chewy and tactile; a bit smaller-scaled than the Vaudesir but strong integrated acidity perfectly balances the wine's sweetness and gives the palate outstanding cut. The very long, palate-staining finish conveys a strong impression of dusty extract. Great potential here. |

Vinous (94)The 2018 Chablis Valmur Grand Cru has a pretty and open bouquet with subtle wild peach and orange pith notes. It is well-defined and demonstrates nicely integrated oak. The palate is well-balanced with fine acidity, taut and fresh. One of the more saline wines of the flight with superb length on the finish. This has class and breeding. Tasted blind at the Burgfest 2018 white tasting. |

Vinous (93-95)The 2018 Chablis Vaudésir Grand Cru is a gorgeous, radiant wine that captures the essence of this warm, early ripening site. Sweet and racy with striking inner perfume, the 2018 has so much to offer. Passion fruit, mint, citrus and exotic floral notes are beautifully woven together in this super-expressive, inviting wine. Strong mineral character graces the exquisite finish. |
